Abstract
L'invention concerne un procédé de fractionnement de matière grasse comprenant les étapes consistant à : a) fournir une matière grasse choisie dans un groupe constitué par le beurre de karité, le beurre de sal, le beurre de kokum, le beurre de mangue, le beurre de mowrah, leurs fractions et un mélange de ceux-ci ; b) blanchir et désodoriser ensuite la matière grasse à l'étape a) pour former une matière grasse raffinée ; c) pré-cristalliser la matière grasse raffinée à l'étape b) sous agitation ; et d) fractionner à sec de manière statique la matière grasse raffinée pré-cristallisée pour former une fraction de stéarine et une fraction d'oléine.
