Abstract
La présente invention aborde le problème de la fourniture d'une composition d'huile et de matière grasse en poudre pour empêcher la séparation de l'eau, qui est capable d'empêcher la séparation d'eau d'un ingrédient alimentaire, de maintenir la qualité d'origine de l'ingrédient alimentaire, une texture fraîche, la jutosité et la fraîcheur, et, en conséquence, l'inhibition du transfert d'humidité vers d'autres ingrédients alimentaires. La présente invention concerne une composition d'huile et de matière grasse en poudre pour empêcher la séparation de l'eau, contenant une composition d'huile et de matière grasse en poudre qui remplit la condition (a). (A) une composition d'huile et de matière grasse en poudre contenant un composant d'huile et de matière grasse comprenant au moins un type de triglycéride de type XXX ayant un résidu d'acide gras Cx aux positions 1 – 3 de la glycérine. Le nombre de carbones x est un nombre entier sélectionné dans la plage 10 – 22. Le composant d'huile et de graisse comprend une huile de type β et de la matière grasse. Les particules de composition d'huile et de matière grasse en poudre sont en forme de plaque et la composition d'huile et de matière grasse en poudre ont une densité apparente en vrac de 0,05 à 0,6 g/cm3.
