Abstract

El pericarpio de la vaina de cacao (CP) se utiliza para producir un ingrediente alimenticio, una harina, utilizando los métodos de calor convectivo, o secado por congelamiento y/o secado por microondas. Las propiedades físicas y tecnológicas observadas del CP seco revelaron su aplicación potencial como un ingrediente en productos alimenticios fabricados. Los niveles de compuestos bioactivos aumentaron significativamente en las muestras de CP seco comparadas con materias primas, especialmente en el caso de los métodos de secado por congelamiento. El uso comercialmente ventajoso del material residual de la vaina de cacao puede utilizarse en tratamientos para humanos y animales con el fin de mejorar las mediciones antropométricas o los marcadores cardiometabólicos en la sangre y para mejorar la composición y la masa del cuerpo. Las modalidades para tratar humanos y animales incluyen la administración oral para reducir la proporción de LDL/HDL o la proporción de triglicéridos/HDL, o la administración tópica como cosmético para tratar líneas finas, arrugas, decoloración de la piel, y otra afecciones de la piel.
