L'évidement fait office d'espace-tampon/fusible de sécurité pendant la durée de stockage des capsules. La membrane est initialement collée sur toute la face inférieure du rebord mais lorsqu'une force ou une pression s'exerce de façon trop forte sur la membrane, p. ex. lors du dégazage du café, un effet de coin se produit entre la première portion du rebord 5 et la membrane (FIG 7 à 10), ce qui permet de retenir la membrane au niveau de la première portion 5. Si l'intensité de la force ou de la pression qui s'exerce sur la membrane n'est pas trop élevée, la membrane reste fixée sur toute la face inférieure du rebord 3, mais à partir d'une certaine intensité, la membrane se décolle au niveau de l'évidement. Le volume total intérieur de la capsule est donc augmenté, ce qui a pour effet de réduire la pression dans la capsule, et ainsi de diminuer les contraintes sur la membrane.
