Abstract

The object of the invention is to use sage flour and sage extract produced from common sage, Salvia officinalis, to a greater extent in the food industry in order to exploit novel flavour notes and simultaneously also the health-promoting activity of sage. It is proposed to add sage flour and/or sage extract of Salvia officinalis to the most varied types of foods, such as juice mixtures, baked goods, sausage products, milk, milk products and ice-cream and prepared dishes. For instance, an advantageous juice mixture consists, e.g., of the following fractions: 1% sage flour, 3% sage blossom extract and 96% natural apple juice. Other additions of plant extracts such as hawthorn, for example, are possible. The invention is employed in the food producing industry.
