Abstract
本発明は、よりフレキシブルな加熱条件設定が可能で、ホップ香気成分を低減または除去し得る新規ビールまたはビール様飲料の製造方法を提供することを目的とする。工程(a)にて、ホップを、ペレット状原料ホップ1kg当り25~100リットルに蒸発減量分を加えた量の溶媒と一緒に、ペレット状原料ホップ1kg当り1~15kgの蒸発減量が得られるように煮沸する。そして、工程(b)にて、先の工程(a)により得られるホップ処理液状物を原料液汁に添加し、原料液汁とホップ処理液状物との混合物を煮沸する。
