Abstract

 本発明により、酸化マグネシウム等の反応添加剤の存在下でEPAおよびDHAを含有する油脂を炭素数18以下の脂肪酸に基質特異性を有するリパーゼによりアルコリシス反応させたのちグリセリド画分を分離し、さらにそのグリセリド画分を酸化マグネシウム等の反応添加剤の存在下で、炭素数20以下の脂肪酸に基質特異性を有するリパーゼによりアルコリシス反応させて、EPA濃縮油およびDHA濃縮油を同時に得る方法が提供される。
