Abstract
本発明は、下記の性質(a)~(d)を有するデキストリンを含有することを特徴とする加工食品組成物に関する: (a)青価が0.4~1.2の範囲である。 (b)80°Cの蒸留水で調製したデキストリン30重量%水溶液を、5°Cで24時間静置した時のゼリー強度が4N/cm2以上である。
(c)25°Cの蒸留水で調製したデキストリン30重量%水溶液を、25°Cで5分間静置した時の粘度が、25°C条件下で100mPa・s以下である。 (d)下記に示すゼリー強度AとBの比(A/B)が2以下である: A:80°Cの蒸留水で調製したデキストリン30重量%水溶液を、5°Cで24時間静置した時のゼリー強度(N/cm2)、
B:25°Cの蒸留水で調製したデキストリン30重量%水溶液を、5°Cで24時間静置した時のゼリー強度(N/cm2)。
本発明が対象とする加工食品組成物には、脂肪組織代替物;脂身に代えて当該脂肪組織代替物を用いて調製される食肉加工食品;乳化様食品;乳化食品;チーズ様食品;チーズに代えて当該チーズ様食品を用いて調製される加工食品;砂糖菓子;および飲料が含まれる。
