Abstract

 本発明は、防腐力(保存性)に優れた穀物加工物(炊飯米、茹で麺、餅等)であり、且つ、酸臭を低減した穀物加工物、該穀物加工食品の製造に供する穀物加工改良剤、さらには、穀物加工食品の酸臭を低減する方法、を提供することを目的とする。  本発明は、酢酸を0.01~0.06質量%含有し、且つ、α-エチルグルコシドを0.00001~0.001質量%含有することを特徴とする穀物加工食品;前記穀物加工食品を製造するために用いる、酢酸及びα-エチルグルコシドを含有した穀物加工改良剤;酢酸を0.01~0.06質量%含有する穀物加工食品に、α-エチルグルコシドを該穀物加工食品当り0.00001~0.001質量%含有するように添加することにより、穀物加工食品の酢酸の酸臭を低減させる方法、を提供する。
