Abstract
Bei einem Verfahren zur Herstellung von Produkten aus Fruchtmasse wird der Wassergehalt der Fruchtmasse zur Erreichung eines lederartigen Zustands durch kontinuierliches kurzzeitiges Kochen unter Vakuum erniedrigt. Die lederartige Fruchtmasse wird in einzelne Produkte geformt. Eine Vorrichtung zur Herstellung von Produkten aus Fruchtmasse weist eine Aufbereitungseinrichtung (23) für die Fruchtmasse und eine Formstation (24) zur Überführung der lederartigen Fruchtmasse in die einzelnen Produkte auf. Die Aufbereitungseinrichtung (23) weist einen Dünnfilmkocher (3) und einen nachgeschalteten, unter Vakuum stehenden Ausdampfraum (14) mit Vakuumpumpe (19) auf. Am unteren Ende des Ausdampfraums (14) ist eine Austragseinrichtung (25) für die getrocknete lederartige Fruchtmasse vorgesehen.
