Abstract

L'invention concerne une pellicule plate comestible comprenant de la cellulose, au moins une charge non soluble ou non dissoute dans une solution de filage à base de nitratométhyl-3-méthyle-3-oxétanne (NMMO) et au moins un autre constituant dissous dans la solution de filage à base de NMMO, qui induit une perturbation de la structure de la cellulose précipitée. La pellicule plate est produite à partir d'une matière de filage contenant du monohydrate de NMMO, de la cellulose dissoute dedans et au moins un autre constituant dissous dedans, qui induit une perturbation de la structure de la cellulose précipitée ( ce constituant étant de préférence une protéine), au moins une charge non dissoute dans la matière de filage (de préférence des sous-produits du blé) et éventuellement également des fibres non dissoutes. Ladite matière de filage est extrudée à travers une filière plate ou à travers une filière annulaire de grand diamètre et est ensuite précipitée dans un bain de NMMO aqueux dilué. La pellicule plate présente sensiblement les mêmes propriétés mécaniques qu'une enveloppe de collagène, c.-à-d. qu'elle aussi aisée à mâcher. Ladite pellicule s'utilise par exemple pour emballer du jambon cuit.
