Abstract

A hydrocolloid, having desirable bulk density, which is soluble in aqueous systems at cold temperatures, a method for preparing same, and compositions incorporating the hydrocolloid. The method includes dissolving a precursor hydrocolloid in a hot aqueous system which is substantially free of sugars, precipitating it out of the aqueous system, and then drying. The compositions include pharmaceutical formulations, personal care products, beverages, and foodstuffs. In addition, a method of preparing and cooking foodstuffs incorporating the hydrocolloid.
