Procédé et dispositifs de présentoir de commercialisation de produits alimentaires nécessitant une ambiance saturée d'eau douce ou d'eau de mer pour les produits de la merDisplay method and devices for marketing food products requiring a saturated atmosphere of fresh water or sea water for seafood products
L'invention présentée ci après concerne un procédé et dispositif de présentoir conçu pour la commercialisation et le stockage de produits alimentaires nécessitant une ambiance saturée d'humidité. Le présentoir décrit ci après est destiné à la commercialisation et au stockage de produits frais , ou vivants tels que les produits de la mer ou tout autre marchandise nécessitant une forte hygrométrie ( fleurs , fruits , légumes ) .L'équipement de ce présentoir comporte un dispositif de brumisation réglable, de réfrigération et de contrôle de la densité de l'eau de mer lorsque les produits entreposés sont des produits de la mer. Une structure en matière composite isolée ou matériaux inoxydables ( 1 ) conforme aux nonnes de salubrité en vigueur , est équipée de portillons de chargement ( 4 ) disposés en façade .L'ouverture du portillon de chargement actionne mécaniquement le volet d'obturation ( 9 ) de passage de la ventilation . Le niveau inférieur ( 5 ) recevra les caisses de marchandise en attente , le niveau supérieur ( 6 ) est prévu pour disposer des caisses dont les produits sont présentés à la vente. L'air est réfrigéré en circuit fermé à l'aide d'un ventilateur ( 3 ) au travers d'un échangeur frigorifique ( 2 ) .Le flux d'air ( 19 ) est humidifié au passage de la goulotte tubulaire de brumisation ( 20 ) disposée à chaque niveau de caisses ( 5 ) et ( 6 ) et comporte une manette de réglage ( 18 ) du volet ( 8 ) dans lequel est incorporée une rampe de buses de brumisation ( 7 ). L'eau qui se condense dans la goulotte ( 20 ) , s'écoule par l'évacuation ( 13 ) vers la réserve pour être re-circulée . Le moteur hydraulique ( 16 ) est commun au ventilateur ( 3 ) et à la pompe ( 17 ) . Un contrôleur de densité de l'eau ( 12 ) constitué d'un tube en forme de U dans lequel est incorporé un peson ( 15 ) dont le mouvement enregistré par une cellule détectrice ( 14 ) commande un dispositif d'injection de saumure .Un panneau ( 22 ) ferme le présentoir en dehors des heures de service . Les caisses contenant les produits sont disposées sur les plateaux de chargements inférieurs ( 5 ) et supérieurs ( 6 ) réfrigérés par la circulation d'air sur l'échangeur ( 2 ) .Le ventilateur ( 3 ) est mû à partir d'un moteur hydraulique ( 16 ) à l'aide de la pression du circuit d'eau des buses dont le refoulement asperge abondamment l'échangeur frigorifique ( 2 ) , assurant la réfrigération de l'eau de brumisation et le maintien d'une hygrométrie maximum .Les gouttelettes d'eau condensée sur les produits s'écoulent sur les niveaux de recueillement (10) et sont évacuées à l'égout .Les gouttelettes d'eau condensée sur les autres parois sont aspirées en partie basse ( 11 ) par la pompe ( 17 ) vers la réserve. Une crépine de filtration est disposée en partie inférieure ( 11 ). Un moteur de ventilateur électrique étanche placé à l'intérieur ou disposé à l'extérieur et muni d'un arbre long pourra être utilisé lorsque la vaporisation est effectué à partir d'eau douce. Le volet d'obturation ( 9 ) est prévu pour arrêter la circulation d'air à l'ouverture du portillon , ainsi que pour éviter la chute de corps étrangers dans le circuit d'eau en recirculation . Une rampe ( 21 ) est disposée sur chacune des niveau de recueillement d'eau usée ( 10 ), et assurera le lavage par commande manuelle ou automatique . Un panneau isolé sera disposé pour fermer le présentoir en dehors des heures de service limitant ainsi les déperditions thermiques. L'aménagement interne du présentoir sera adapté pour recevoir des caisses dont les dimensions correspondent aux normes dimensionnelles standard du transport , et favorisera la commercialisation de la marchandise dans l'emballage d'origine .Le débit de brumisation varie en fonction des marchandises entreposées , aussi la goulotte de brumisation ( 20 ) est équipée d'un dispositif de réglage ( 8 ) contenant la rampe de buses ( 7 ) , qui pivote par l'action d'une manette de réglage ( 18 ) . Le passage du flux d'air ( 19 ) entaîne les fines gouttelettes d'eau à l'ouverture du volet ( 8 ) .Celles ci sont réparties sous forme de spray invisible sur la marchandise étalée . Le dispositif de contrôle de la salinité est réalisé à partir d'un tube en forme de U ( 12 ) dans lequel circule un faible pourcentage du volume d'eau brumisée par l'injecteur ( 21 ) , le niveau est maintenu constant dans I tube ( 12 ) par débordement à l'évacuation ( 13 ). La variation de la salinité de l'eau engendre une oscillation du peson ( 15 ) enregistrée par une cellule détectrice ( 14 ) qui commande une électrovanne d'injection de saumure .
