Abstract

La présente invention se rapporte à un procédé pour la préparation d'un en-cas à base de pommes frites comportant un niveau contrôlé de bulles sur les surfaces externes et un taux considérablement réduit de matière grasse. Ledit procédé consiste à préparer une pâte à partir d'au moins un ingrédient contenant de l'amidon et de l'eau, à chauffer la pâte ainsi préparée, la pâte traitée à la chaleur contenant un taux d'humidité inférieur à 35 % en poids environ, à former une feuille comportant la pâte traitée à la chaleur, à créer des formes finies avec la pâte en feuille, à traiter les formes finies si nécessaire afin de réduire le taux d'humitidé des formes jusqu'à une valeur inférieure à 30 % en poids environ, et à faire frire les formes finies traitées pour fabriquer un produit frit allégé en matière grasse.
