Abstract

L'objet du procédé, et l'appareil, de l'invention est de réduire l'effet de pompage ainsi que l'énergie thermique pendant la régénération de chaleur entre des zones individuelles (Z1, Z2, ..., Zn) dans un pasteurisateur à tunnel, respectivement, afin de simplifier autant que possible l'appareil. L'on a atteint cet objectif dans un appareil du type utilisant au moins une paire de convoyeurs (T1, T2) caractérisé en ce que la paire de convoyeurs (T1, T2) est d'une longueur égale et s'étend dans des directions opposées, et en ce que l'eau destinée à l'arrosage des produits dans une zone donnée de la partie de refroidissement (Z1, Z3) du convoyeur (T1) continue de se répandre sur les produits passant dans la zone de la partie de chauffage (Z1-Z3) adjacente au centre de la partie de pasteurisation (Z4, Z5) de l'autre convoyeur (T2), à une distance identique de celui-ci et dans la même direction. Les produits sont respectivement chauffés puis refroidis par de l'eau, laquelle est répandue sur les produits et est recirculée, la régénération de chaleur s'effectue par un échange croisé transversalement à l'appareil par mise en place des deux convoyeurs (T1, T2), un (T1) au dessus de l'autre (T2), et par aspersion d'eau vers le bas directement à partir du convoyeur supérieur (T1) sur le convoyeur inférieur (T2).
