Par contre, ils présentent un double inconvénient, à savoir, nécessiter une construction qui doit tenir compte de ce que, précisément, la cuisson s'effectue à une pression nettemment supérieure à la pression atmosphérique, ce qui impose non seulement des qualités mécaniques correspondantes, mais aussi des dispositifs de sécurité, et n'assurer qu'une cuisson médiocre sur le plan de la diététique, notamment parce que les vitamines ne la supportent pas et parce que l'eau de cuisson est la plupart du temps trop concentrée pour être utilisable. Par rapport à ces appareils, les appareils de cuisson à la vapeur à la pression atmosphérique présentent le double avantage de respecter les vitamines des aliments et de ne nécessiter ni qualités mécaniques particulières de la construction ni dispositifs de sécurité. The device for grinding and mixing food can be mounted so that it cannot be started until cooking is finished, or, so that it can be started intermittently during the period of end of cooking to accelerate, in some cases, the completion thereof.
