Abstract

(57) Изобретение относится к способу производства сухого заменителя цельного молока (ЗЦМ). Целью изобретения является снижение энергоемкости процесса и повышение качества готового продукта. Для получения сухого ЗЦМ смешивание сгущенного обезжиренного молока и жировой смеси ведут одновременно с процессом эмульгирования при давлении 22103 - 12 103 Па и температуре сгущенного обезжиренного молока и жировой смеси соответственно 50-55 и 65-756С. 1 табл.(57) The invention relates to a method for the production of dry whole milk replacer (WMS).
