本發明關於一種軟糖。
可感覺到薄荷系的冷涼感的零食很受歡迎,然而可感覺到薄荷系的冷涼感的糖果,若欲使冷涼感強烈,則薄荷系成分的摻合量會增加,而增加了苦味。 軟糖,其柔軟的口感被大眾喜愛,為近年來受歡迎的零食。然而並不太存在薄荷系的軟糖。 雖然有薄荷系的口香糖、或糖錠、硬糖,然而該等無法得到軟糖所特有的溶化般的柔軟口感。另外,薄荷系的零食,正需要一種可得到目前為止沒有的新形態冷涼感的零食。

本發明可提供、製造一種軟糖,可強烈感覺到薄荷的冷涼感,且可抑制薄荷系香料的苦味。另外,本發明之軟糖,可得到感覺含有薄荷系香料的咀嚼物通過口中、喉嚨、食道這種獨有的冷涼感。
本發明提供一種軟糖,其特徵為:以固體成分計,含有油脂2.0重量%以上15.0重量%以下,含有L-薄荷醇及其衍生物0.2重量%以上未滿3.0重量%。 以固體成分計,是指基於固體成分換算比例,對象成分的固體成分換算量(水分除外的重量)在完成品的重量中所佔的比例。
糖果是以糖類、糖醇、水飴等的糖質為主原料的零食。軟糖是指具有柔軟的口感,且水分含量大概在5~15%的軟質性糖果。
另外,與軟糖類似的零食,可列舉果凍糖,然而果凍糖與軟糖,從果凍糖不含油脂,並未乳化這點,是口感(果凍糖彈力較強)、成形性(果凍糖大多為鑄型成形)等有所不同的糖果。
軟糖包括焦糖、法奇軟糖、牛軋糖、太妃糖、方旦糖等。
本發明之軟糖,以固體成分換算比例計,含有油脂2.0重量%以上15.0重量%以下。此外,油脂的水分含量接近0%,因此其摻合量,在以摻合比例求得的情況也不會改變。若油脂超過15%,則成形時,因為物理的刺激,乳化狀態會被破壞,因此難以製造成軟糖。
本發明之軟糖所可使用的油脂並無限定,其例子,可列舉植物油脂、棕櫚油、大豆油、菜籽油、葵花油、棉籽油、椰子油、玉米油、芝麻油、乳木果油、動物性油脂、沙拉油、米糠油、糠油、椿油、芥花油、紅花油、紅花油、荏胡麻油、亞麻仁油、橄欖油、花生油、杏仁油、酪梨油、榛果油、核桃油、葡萄籽油油、可可脂、花生醬、豬油(lard)、牛油(vet)、乳脂、奶油、人造奶油、酥油、鮮奶油等。
本發明之軟糖,其特徵為:含有L-薄荷醇及其衍生物,以固體成分計0.2重量%以上未滿3.0重量%。L-薄荷醇為別名,是可表示為[1R-(1α,2β,5α)]-6-甲基-2-(1-甲基乙基)環己醇的化合物。另外,薄荷醇衍生物,可列舉薄荷醇甲醚、薄荷醇乙基醚、薄荷醇丙基醚、薄荷醇丁醚、醋酸薄荷酯、丙酸薄荷酯、乳酸薄荷酯、單薄荷基甘油基醚、二薄荷基甘油基醚、單薄荷基丙二醇醚、二薄荷基丙烯甘油醚、戊二酸單薄荷酯、戊二酸二薄荷酯、3-(l-薄荷氧基)丙烷-1,2-二醇、對薄荷烷-3,8-二醇、6-異丙基-9-甲基-1,4-二氧螺-(4,5)-癸烷-2-甲醇、琥珀酸薄荷酯及其鹼土類鹽、三甲基環己醇、N-乙基-2-異丙基-5-甲基環己烷羧醯胺、3-(l-薄荷氧基)-2-甲基-丙烷-1,2-二醇、薄荷酮甘油縮酮、乳酸薄荷酯、[1’R,2’S,5’R]-2-(5’-甲基-2’-(甲基乙基)環己氧基)乙烷-1-醇、[1’R,2’S,5’R]-3-(5’-甲基-2’-(甲基乙基)環己氧基)丙烷-1-醇、[1’R,2’S,5’R]-4-(5’-甲基-2’-(甲基乙基)環己氧基)丁烷-1-醇等。
L-薄荷醇及其衍生物,可為由天然物產生的物品或合成品,L-薄荷醇及其衍生物導入本發明之軟糖的方法完全不受限定,大多數的情況,L-薄荷醇或其衍生物,在製造過程之中,是以含有L-薄荷醇或其衍生物的薄荷系香料的形式來添加。此外,亦可將L-薄荷醇及其衍生物直接添加至本發明之軟糖。
薄荷系香料的例子,為胡椒薄荷油、綠薄荷油、薄荷等的精油、或工業上生產的香料(無論是液狀、粉末狀、固體等形狀),或者以薄荷或胡椒薄荷、綠薄荷的葉子這樣的天然物的形式來添加亦可。L-薄荷醇及其衍生物的濃度,可藉由氣相層析(Gas Chromatography: GC)來測定。使用GC測定L-薄荷醇及其衍生物的濃度的例子,可列舉下述方法。 首先,採取樣品至茄型燒瓶中。對所採取的樣品添加溶劑(苯及/或己烷)與內部標準物質(聯苯),進行回流萃取。脫水後,進行GC分析。分析時,可藉由例如機器使用6890N(Agilent公司製),並使用毛細管柱DB-17,φ0.25mm×30m,df.0.25μm的情況,管柱溫度定為60℃→5℃/min→120℃→1℃/min→140℃→5℃/min→250℃(10min),注入量定為1μL來作測定。
在本發明之軟糖中,藉由使油脂與薄荷系香料融合,薄荷的冷涼感容易在口腔內擴散,其結果,認為會得到強烈的冷涼感。另外,在本發明之軟糖之中,油脂會將糖果胚料與香料連結,可使味道呈現出整體感。
另外,本發明之軟糖可製成無糖物。無糖物,是指糖類含量為零或含量少的物品,並且滿足每100g食品之中,糖醇除外的單糖類或雙糖類的含量大概未滿0.5g的條件。
軟糖容易附著於牙齒,因此會有被認為容易成為齲齒原因的情形。薄荷系的軟糖,為了在膳食最後得到冷涼感而食用的場合很多,是受到清潔意識、健康意識高的消費者所喜愛的食品,因此,不會導致齲齒的產品尤其被大眾喜愛,薄荷系的無糖物軟糖是有需求的。另外,無糖物軟糖,與使用糖類的軟糖相比,卡路里較低,因此從這點看來也會有需求。另外,若與砂糖等的糖類的甜味相比,則無糖物軟糖所使用的麥芽糖醇等的甜味,與薄荷的冷涼感的相容性較為良好。
本發明之軟糖,除了上述之外,作為原料,還可適當地含有糖醇、阿拉伯膠、明膠、蛋白質、纖維素、其他香料、乳化劑、甜味料、著色料等。另外,本發明之軟糖亦可施加糖衣。另外,還可含有糖類。
糖醇的例子,可列舉麥芽糖醇、赤藻糖醇、木糖醇、山梨醇、異麥芽糖醇、甘露醇、乳糖醇、還原水飴等。在本發明中,最合適的糖醇為麥芽糖醇及還原水飴。麥芽糖醇亦被稱為還原麥芽糖,一般而言是將麥芽糖還原所得到,然而無關於製法或粒徑等,可使用各種麥芽糖醇。還原水飴是將澱粉分解物的水飴還原之物,完全不受限定,可使用市售品等。
阿拉伯膠,是由相思樹屬的塞內加爾相思樹或塞伊耳相思樹、或與其同屬的樹液所調製出的水溶性多糖,無論產地來源等,可使用市售品等。
明膠可由動物的皮膚或骨骼的結締組織的膠原蛋白取得,亦被稱為動物膠。明膠並不受來源等所限定,可使用豬皮、豬骨、牛皮、牛骨、或魚等各種來源的產品。表示明膠強度的布魯姆值(bloom value),理想的情況,希望為250左右或其以上。
蛋白質,可使用動物性蛋白質、植物性蛋白質、來自大豆的蛋白質、來自牛乳的蛋白質、來自蛋白的蛋白質、其他各種蛋白質。 在添加乳化劑的情況,可使用有機酸單甘油酯類、甘油脂肪酸酯類、聚甘油脂肪酸酯類、蔗糖脂肪酸酯類、去水山梨醇脂肪酸酯類、丙二醇脂肪酸酯類、卵磷脂,乳成分可使用牛乳、脫脂奶粉、全脂奶粉、鮮奶油等。
在進一步添加香料的情況,可使用如橙油、檸檬油、葡萄柚油、萊姆油、紅橘油、橘皮油等的柑橘精油類、多香果、大茴香籽、羅勒、月桂葉、小豆蔻、芹菜、丁香、肉桂、小茴香、蒔蘿、大蒜、西洋芹、肉豆蔻、芥末、洋蔥、紅椒粉、迷迭香、胡椒般的周知香料精油類,或如油性樹脂類、薴烯、沉香醇、橙花醇、香茅醇、香葉醇、檸檬醛、丁香酚、肉桂醛、茴香腦、紫蘇醛、香草醛、γ-十一內酯、己酸烯丙酯、L-香旱芹酮、麥芽醇等般的周知分離或合成香料、及將這些柑橘精油類、香料精油類、合成香料依照目標比例混合的柑橘混合物、表現出各種水果味等的調合香料。
在添加甜味料的情況,特佳為添加高甜味度甜味料。高甜味度甜味料的具體例,可列舉α-葡萄糖基轉移酶處理甜菊、阿斯巴甜、醋磺內酯鉀、阿力甜、甘草萃取物(甘草素)、甘草酸三銨、甘草酸三鉀、甘草酸三鈉、甘草酸二銨、甘草酸二鉀、甘草酸二鈉、仙茅甜蛋白、糖精、糖精鈉、甜蜜素、蔗糖素、甜菊萃取物、甜菊末、甘素、索馬甜(Thaumatin)、甜凉茶萃取物、奈及利亞漿果萃取物、紐甜、新橙皮苷二氫查耳酮、果糖基轉移酶處理甜菊、巴西甘草萃取物、神秘果萃取物、羅漢果萃取物、酵素處理甘草、酵素分解甘草。
另外,本發明之軟糖,藉由添加高甜味度甜味料,較能夠抑制薄荷系的苦味。尤其在製成無糖物軟糖的情況,藉由添加高甜味度甜味料,可成為無糖物且美味的軟糖。
另外還可添加其他甜味料,並無限定。其例子,可列舉阿拉伯糖、半乳糖、木糖、葡萄糖、岩藻糖、山梨糖、果糖、鼠李糖、核糖、異性化糖漿、N-乙醯基葡萄糖胺等的單糖類;異海藻糖、蔗糖、海藻酮糖、海藻糖、新海藻糖、巴拉金糖、麥芽糖、蜜二糖、乳酮糖、乳糖等的雙糖類;α-環糊精、β-環糊精、異麥芽糖寡糖(異麥芽糖、異麥芽三糖、潘諾糖等)、寡-N-乙醯基葡萄糖胺、半乳糖基蔗糖、半乳糖基乳糖、半乳吡喃糖基(β1-3)半乳吡喃糖基(β1-4)葡萄吡喃糖、半乳吡喃糖基(β1-3)葡萄吡喃糖、半乳吡喃糖基(β1-6)半乳吡喃糖基(β1-4)葡萄吡喃糖、半乳吡喃糖基(β1-6)葡萄吡喃糖、木寡糖(木三糖、木二糖等)、龍膽寡糖(龍膽二糖、龍膽三糖、龍膽四糖等)、水蘇糖、Theander寡糖、黑麴黴寡糖(黑麴黴糖等)、巴拉金糖寡糖、巴拉金糖糖漿、果寡糖(科斯糖、耐斯糖等)、蔗果五糖、聚右旋糖、麥芽糖基-β-環糊精、麥芽寡糖(麥芽三糖、四糖、五糖、六糖、七醣等)、棉子糖、砂糖結合水飴(偶合糖)、大豆寡糖、轉化糖、水飴等的寡糖類;異麥芽糖醇、赤藻糖醇、木糖醇、甘油、山梨醇、巴糖醇、麥芽糖醇、麥芽四糖醇、麥芽三糖醇、甘露醇、乳糖醇、還原異麥芽糖寡糖、還原木寡糖、還原龍膽寡糖、還原麥芽糖水飴、還原水飴等的糖醇。
將製造本發明之軟糖的例子記載於以下內容。首先,糖醇、還原水飴、阿拉伯膠、明膠,進一步適當地將乳化劑、甜味料等混合、溶解。接下來以減壓來進行濃縮,理想的情況,使水分成為10%以下。此處,添加薄荷系香料以及因應必要添加其他香料或著色料等,並且混合。此外還添加糖醇微粉,並且混合,然後使混合好的胚料成形。成形的方法完全不受限定。
成形的軟糖,亦可實施糖衣等的包覆,或不實施包覆。在施加糖衣時,例如使所製造出的軟糖適當地熟成,並以含有糖醇、阿拉伯膠、香料等的胚料來施加糖衣。
以下,藉由實施例進行詳細說明。但是,本發明並不受實施例限定。 [實施例]
在本實施例之中,摻合比例是指各原料的重量在完成的軟糖的重量中所佔的比例,原料的重量也包括製造的過程中增加或損失的水分,因此摻合比例的合計也會有不為100%的情形。 固體成分換算比例,是指原料的固體成分換算量(水分除外的重量)在完成的軟糖的重量中所佔的比例。
在本實施例中,如圖1所示般,製造出軟糖。亦即,首先裝入麥芽糖醇、還原水飴、阿拉伯膠、明膠、大豆蛋白、纖維素、植物油脂、乳化劑、高甜味度甜味料(醋磺內酯鉀、蔗糖素),在60~80℃下溶解,調製成Bx(溶液中的固體成分濃度)成為71~75,將其在112℃下減壓濃縮,使水分成為8%左右。於其中加入含有薄荷系香料的香料等。另外,在本實施例之中,進一步在後來使溫度成為50℃,添加麥芽糖醇微粉與乳化劑,並且混合。麥芽糖醇微粉,是指麥芽糖醇的粒徑分布中,累計90%的粒徑為100μm以下的粉體。然後進行胚料的成形。
實施例1至36的軟糖,是依照表1至表6所表示的摻合比例,藉由上述方法所製造。固體成分換算比例也揭示於表中。此外,表中L-薄荷醇與薄荷醇衍生物的摻合量,被計算出來在所摻合的香料之中,L-薄荷醇與薄荷醇衍生物在香料中含有50重量%。
接下來,分別由充分累積經驗的5名專家評審,針對在口中、喉嚨、食道的冷涼感、薄荷的美味程度,進行各測試例的軟糖的評價。判斷基準如以下所述。

實施例15至18、21至24、27至30、33至36,可得到良好的結果。此外,實施例14至18、20至24、26至30、32至36,關於在口中、喉嚨、食道的冷涼感,評審全員給了高評價。另一方面,對於實施例6、12、18、24、36,薄荷的美味程度的評價低。
亦即,含有油脂2.0重量%以上、含有L-薄荷醇及其衍生物0.2重量%以上未滿3.0重量%的軟糖,可說是感覺到在口中、喉嚨、食道的冷涼感,並可感覺到薄荷的美味。 另外還可知,L-薄荷醇及其衍生物為0.5重量%以上,可更強烈感覺到在口中、喉嚨、食道的冷涼感。
另外還可知,本發明之軟糖,可得到感覺含有薄荷系香料的咀嚼物通過口中、喉嚨、食道這種獨有的冷涼感。軟糖在咀嚼的同時會被含化,因此與口香糖或硬糖相比,在食用時,通過口中、喉嚨、食道的含有薄荷系香料的液體量較多。因此,推測為可得到感覺含有薄荷系香料的咀嚼物通過口中、喉嚨、食道這種獨有的冷涼感的產品。
圖1表示製造本發明之軟糖的一個例子之圖。
Claims (3)
- 一種軟糖,其特徵為:以固體成分計,含有油脂2.0重量%以上10.0重量%以下,含有L-薄荷醇及其衍生物0.2重量%以上未滿3.0重量%。
- 如請求項1所記載之軟糖,其係無糖物。
- 如請求項1或2所記載之軟糖,其中進一步摻合高甜味度甜味料。
