Description
本發明係關於不發生乳蛋白質凝聚或沈澱之具有優異品質安定性及良好風味之酸性乳飲料,更詳細而言,係關於即使實質上不使用增黏安定劑,仍可防止酸性乳飲料特有的乳蛋白質凝聚或沈澱等之品質劣化,而且,具有良好風味之酸性乳飲料及其製造方法。
發酵乳、乳酸菌飲料、優酪乳等之含活菌型酸性乳飲料係作為具有整腸作用或免疫賦活作用等之生理活性之健康飲料,廣泛地飲用。另外,因為以由乳原料而成之培養基培養乳酸菌或雙叉乳桿菌屬細菌所得之培養液(發酵乳基料)係具有特有的風味,所以施以殺菌處理等後,添加風味等之目的下,利用於各種飲食品。
另外,對應近年來消費者多樣化的嗜好,除了傳統的酸性乳飲料以外,亦提出各種型式的酸性乳飲料,其中,抑制熱量,即所謂的清淡型酸性乳飲料的開發盛行。此等清淡型酸性乳飲料,因為通常係抑制熱量,所以將主要熱量來源之糖質,進行削減或取代成難消化性糖類而製造。然而,一般乳蛋白質因為於酸性條件下分散安定性變得不安定,進行如此糖質的削減或更改時,發生保存時容易產生沈澱或凝聚、乳清分離等之間題。
因為上述之沈澱、凝聚或乳清分離不僅明顯地損害外觀,亦影響飲用時的風味,損害清涼感,所以提出將此改善之各種方法。具體上提出,以提昇酸性乳飲料之品質安定性為目的,施以均質化處理之方法(專利文獻1)、或1種或2種以上併用果膠、羧甲基纖維素(CMC)、大豆多糖類、結蘭膠、刺槐豆膠、羅望子膠、褐藻酸丙二醇酯等之各種增黏安定劑之方法(專利文獻2至4)。
如此一來,通常關於製造清淡型酸性乳飲料,以提昇品質安定性為目的,使用各種增黏安定劑係現階段常用的方法。

然而,對於不僅品質的安定性,對於風味方面亦必須重視之酸性乳飲料,使用如傳統之增黏安定劑時,該增黏安定劑具有特有的黏性感等,造成風味上不佳之質感(texture)。另外,作為增黏安定性之一般常使用之果膠或CMC,於低pH範圍有凝膠化之性質,利用於酸性乳飲料,談不上係有效手段。
另外,對於抑制熱量,亦即清淡型之酸性乳飲料,因為兼具有程度剛好的甜味及清爽的質感(texture)之風味係有令人喜好的趨勢,所以使用增加黏性感之增黏安定劑,說不上係適合的。
因此,本發明係不利用傳統上所使用之各種增黏安定劑,提供品質安定性優異之風味良好之抑制熱量之清淡型酸性乳飲料及其製造方法為課題者。
本發明者等為得到不使用增黏安定劑,品質安定性優異之低熱量酸性乳飲料,努力檢討時,發現配合聚葡萄糖及特定糖質於酸性乳飲料以滿足所定條件,可得到具有與使用增黏安定劑時相同的品質安定性之風味良好的酸性乳飲料,而完成本發明。
亦即,本發明含有聚葡萄糖及至少1種以上選自群(a)之糖質,此等可溶性固形物之合計為12.0質量%至17.0質量%,且實質上不含有增黏安定劑為特徵之酸性乳飲料。

本發明中所使用之聚葡萄糖或各種糖質、因為係一般作為甘味質所使用之食品素材,所以安全性優異,另外,僅使用此等以滿足所定之條件,不使用容易對風味或食感造成影響之各種增黏安定劑,於酸性條件下可容易提升乳蛋白質之安定性,可得到品質安定性優異之具有良好風味之酸性乳飲料。
因此,藉由本發明,因為於提升品質安定性之目的下,可不使用各種增黏安定劑,亦可期待減低製品成本、或提升作業效率等之效果。
配合於本發明之酸性乳飲料中之聚葡萄糖係於高溫高壓下使葡萄糖及山梨糖醇及檸檬酸聚合所得之多糖類,混合存在單糖至分子量為數萬者。此聚葡萄糖係可利用市售物,例如Litesse(DANISCO CULTOR社製:平均分子量為1,200)等之商品名者。
另外,本發明之酸性乳飲料中之與上述聚葡萄糖一起配合之選自群(a)之糖質(以下稱為「糖質(a)」)係至少1種以上選自葡萄糖、果糖、砂糖、海藻糖、乳糖、麥芽糖、赤蘚醇、山梨糖醇、木糖醇、麥芽糖醇、乳糖醇、異麥芽酮糖及半乳寡糖所成群者,此等係廣泛地使用於一般飲食品中分子量(平均)較小之糖質。此等糖質(a)中,因為認為尤其藉由使用砂糖,具有明顯地抑制乳蛋白質凝聚或沈澱之效果,所以適合。另外,即使併用2種以上糖質作為糖質(a)時,至少1種係使用砂糖,就提升酸性乳飲料品質安定性之觀點,係適宜的。
本發明中,若使用糖質的分子量較大時,不能得到抑制酸性乳飲料中乳蛋白質凝聚或沈澱之效果。亦即,本發明中,即使僅使用多糖類之上述之聚葡萄糖,不能抑制酸性乳飲料中乳蛋白質凝聚或沈澱。如此地因糖質種類而所得效果發生差異之理由雖未確定,但認為因為各種糖質之分子結構的差異而對於酸性乳飲料中之乳蛋白質粒子,造成不同的立體影響。
本發明中,聚葡萄糖及糖質(a)之使用量係以設定源自此等糖質之可溶性固形物為12.0質量%至17.0質量%,以13.5質量%至17.0質量%為宜。尤其為提升所得酸性乳飲料之品質安定化,除了聚葡萄糖以外之糖質,亦即,分子量較小之糖質(a)之使用量係以設定5.0質量%以上,以6.0質量%尤佳。因此,實質上不使用增黏安定劑,可得到品質安定性非常優異之具有良好風味之酸性乳飲料。另外,可溶性固形物若低於12.0質量%時,因為不能得乳蛋白質充份的分散安定性,所以不適宜。另外,若高於17.0質量%時,因為質感差,不得到充份的嗜好性,所以不適宜。
另一方面,作為配合上述聚葡萄糖及糖質(a)之酸性乳飲料基料,可為牛乳、山羊乳、羊乳、豆漿等之動物及植物來源之液狀乳、脫脂奶粉、全脂奶粉、或將自奶粉、濃縮乳還原的乳直接或以水稀釋,使用乳酸菌或雙叉乳桿菌屬細菌等之微生物發酵處理所得之發酵乳、含有乳製品乳酸菌飲料等之活菌式之飲料或施以殺菌處理之發酵乳之乳性飲料、或克菲爾(kefir)之外,加入有機酸、果汁等之酸成份於乳成份之酸性物。
由微生物發酵進行上述酸性乳飲料之調製時,作為該製造所使用之微生物,通常只要係食品製造上所使用之乳酸菌或雙叉乳桿菌屬細菌,並無特別的限制,可舉例如乾酪乳酸桿菌、嗜酸乳酸桿菌、瑞士乳酸桿菌、加氏乳酸桿菌、發酵乳酸桿菌、唾液乳酸桿菌、lactobacillus jugurti、保加利亞乳酸桿菌、Lactobacillus johnsonii等之乳酸桿菌屬細菌、嗜熱鏈球菌等之鏈球菌屬細菌、乳酸乳球菌乳酸亞種、乳脂乳酸乳球菌、植物乳球菌、棉子糖乳球菌等之乳酸球菌屬細菌、糞腸球菌(Enterococcus faecalis)、屎腸球菌(Enterococcus faecium)等之腸球菌屬細菌、短雙叉桿菌、龍根雙叉乳酸桿菌、嬰兒雙叉桿菌、青春雙叉桿菌、分歧雙叉桿菌、鏈雙叉桿菌、假鏈雙叉桿菌、角雙叉桿菌、雷特氏雙叉桿菌、動物雙叉桿菌等之雙叉桿菌屬細菌。另外,此等乳酸菌或雙叉桿菌屬細菌係可單獨使用或併用2種以上。
另外,上述微生物發酵時,除了乳酸菌或雙叉桿菌屬細菌,亦可併用其他的微生物,例如酵母菌屬、念珠菌屬、紅色酵母屬、比齊酵母菌屬、裂殖酵母屬、圓酵母屬、結合酵母屬等之酵母類、或麴菌屬、青黴菌屬、散囊菌屬、紅麴菌屬、毛黴菌屬、紅麵包黴屬、根黴屬等之絲狀菌等。
使上述微生物作用於原料乳之條件或發酵方法,適用通常的發酵乳製造所使用之條件及方法即可,並無特別的限制。例如,作為發酵條件,以30至40℃之溫度,使發酵成pH3.0至4.0即可,作為發酵方法,可適當地選自靜置發酵、攪拌發酵、振盪發酵、通氣發酵等,使用適合用於發酵之微生物之方法即可。
本發明中,藉由使用於靜置狀態由微生物發酵所調製之發酵乳,併用後述之聚葡萄糖及糖質(a),實質上即使不使用安定劑,仍可得到明顯的品質安定性之效果。
另外,以酸成份調整上述酸性乳飲料時,於乳原料中,添加各種酸味成份,調整成pH3.0至4.0即可。在此,作為可使用作為酸味成份者,可舉例如乳酸、檸檬酸、酒石酸、蘋果酸、醋酸等、或葡萄柚、萊姆、柳橙、草莓、藍莓、桃、葡萄、蘋果等之果汁,亦可將此等併用2種以上。
進而,本發明之酸性乳飲料中,作為任意成份,可配合源自乳原料之鈣以外之水溶性鈣鹽。作為如此水溶性鈣鹽,可舉例如認可作為食品添加物之乳酸鈣、葡糖酸鈣、氯化鈣、磷酸鈣等,可使用此等,並無特別的限制。本發明之酸性乳飲料中,此等鈣鹽之添加量,作為鈣量,為0.01質量%至0.06質量%,以0.01質量%至0.05質量%程度為宜。
一般而言,已知於酸性乳飲料中,配合鈣鹽時,所添加之鈣鹽與乳蛋白質凝聚,成為品質劣化的原因,傳統上為將此改善,對於配合鈣鹽於酸性乳飲料之技術,進行各種提案。具體上舉例時,於加鈣乳性酸性飲料中使用果膠之方法(特開平8-56567號公報、特開平8-112058號公報、特開平8-112059號公報)或使用大豆食物纖維(大豆多糖類)之方法(特開平10-4876號公報、特開2004-283182號公報)。
然而,此等傳統技術,酸性乳飲料中因添加鈣鹽而引起品質劣化,藉由配合果膠或大豆食物纖維等之增黏安定劑,以積極地防止乳蛋白質凝聚,與配合鈣鹽時,即使不實質上使用增黏安定劑,仍可得到優異的品質安定性效果之本發明之酸性乳飲料明確地不同,本發明之酸性乳飲料與傳統的技術相比較,係非常有效的。
製造本發明之酸性乳飲料,除了配合上述聚葡萄糖、糖質(a)及因應需要之鈣鹽等於成為基料之酸性乳飲料以外,依據通常的酸性乳飲料之製造方法進行即可。另外,聚葡萄糖、糖質(a)、鈣鹽等之配合時期及配合方法並無特別的限定,可於成為基料之酸性乳飲料之製造步驟之任意階段添加即可。例如,另外調製以所定比率含有聚葡萄糖、各種糖質、進一步鈣鹽之糖漿,配合其於使微生物作用於乳原料所得之溶液即可。另外,糖漿的調製係依常法進行即可,例如昇溫於70℃以上的水中,溶解聚葡萄糖及各種糖質等,以112℃平板殺菌10秒後而調製即可。
於本發明之酸性乳飲料,除了聚葡萄糖、糖質(a)及鈣鹽以外,於不損害由本發明可得之效果之範圍下,可配合通常配合於各種飲食品之食品素材。作為如此之食品素材,可舉例如阿斯巴甜、索默坦蛋白質(thaumatin)、蔗糖素(sucralose)、醋磺內酯鉀、甜菊等之高甜度甘味料、蔗糖脂肪酸酯、甘油脂肪酸酯、聚甘油脂肪酸酯、山梨糖醇酐脂肪酸酯、卵磷脂等之乳化劑、黃油(cream)、奶油、酸奶等之乳脂肪、檸檬酸、乳酸、醋酸、蘋果酸、酒石酸、葡糖酸等之酸味料、維生素A、維生素B、維生素C、維生素E類等之各種維生素類、鎂、鋅、鐵、錳等之礦物質分、優酪乳類、莓類、柳橙類、花梨類、紫蘇類、柑橘(citrus)、蘋果類、薄荷類、葡萄類、杏桃類、梨、雞蛋布丁餡、桃、哈密瓜、香蕉、熱帶水果、香草類、紅茶、咖啡類等之風味類。
如此所得之酸性乳飲料即使減低該熱量例如50Kcal/100ml以下,以20Kcal/100ml至50Kcal/100ml為宜時,不使用果膠或大豆食物纖維等之增黏安定劑,仍可有意義地防止、改善乳蛋白質之凝聚、沈澱等之品質劣化。
以下係舉試驗例及實驗例更詳細地說明本發明,但本發明並不局限於此等實施例。
製造酸性乳飲料:將溶解14.9質量%之脫脂奶粉及3.5質量%之葡萄糖之水溶液,以121℃平板殺菌3秒後,接種乾酪乳酸桿菌(Lactobacillus casei)之菌元(starter),培養至pH3.6,將其冷卻而得發酵物。接著,以15MPa均質化處理此發酵物後,於該23重量份中,分別混合77重量份之如表1所示成份之糖漿,得到試驗品1至3。另外,糖漿係溶解表1所示成份於水,以112℃平板殺菌10秒後冷卻而調製。
對於所得試驗品1至3之剛製造後及於10℃保存14天後之製品的外觀、沈澱、乳清分離、風味,依據下述基準進行評估。該結果如表2所示。

由表2之結果明顯表示,僅含有聚葡萄糖(PD)之試驗品1,風味、物性皆差,另外,配合果膠或羧甲基纖維素(CMC)等之增黏安定劑之試驗品2及3,雖然得到物性之改善效果,認為質感(食感或口感)有變差之趨勢。
製造酸性乳飲料(1):將溶解14.9質量%之脫脂奶粉及3.5質量%之葡萄糖之水溶液,以121℃平板殺菌3秒後,接種乾酪乳酸桿菌(Lactobacillus casei)之菌元(starter),培養至pH3.6,將其冷卻而得發酵物。接著,以15MPa均質化處理此發酵物後,於該23重量份中,分別混合77重量份之另外調製之糖漿,得到實施品1至12及比較品1及2。另外,糖漿係溶解表3所示成份於水,以112℃平板殺菌10秒後冷卻而調製。
對於所得實施品1至12及比較品1及2之剛製造後及於10℃保存14天後之製品的外觀、沈澱、乳清分離、風味,依據試驗例1之基準進行評估。該結果如表4所示。
由表4之結果明顯表示,認為併用聚葡萄糖(PD)及各種糖質所調製之酸性乳飲料,得到與使用果膠作為增黏安定劑之比較例1相同之品質安定性效果,風味亦良好。另外,使用難消化性糊精作為多糖類之試驗品2,即使併用糖質,亦不能得與聚葡萄糖相同之品質安定性效果。另外,與聚葡萄糖併用之糖質中,認為砂糖係最有效的。
製造酸性乳飲料(2):將溶解14.9質量%之脫脂奶粉及3.5質量%之葡萄糖之水溶液,以121℃平板殺菌3秒後,接種乾酪乳酸桿菌之菌元,培養至pH3.6,將其冷卻而得發酵物。接著,以15MPa均質化處理此發酵物後,於該23重量份中,分別混合77重量份之另外調製如表5所示組成之糖漿,得到製品1至6。另外,糖漿係溶解各成份於水,以112℃平板殺菌10秒後冷卻而調製。
對於所得製品1至6之剛製造後及於10℃保存14天後之製品的外觀、沈澱、乳清分離、風味,依據試驗例1之基準進行評估。該結果如表6所示。
由表6之結果明顯表示,認為併用聚葡萄糖(PD)及各種糖質所調製之酸性乳飲料,即使此等源自糖質之可溶性固形物相同,如製品1、2之源自聚葡萄糖以外之糖質之可溶性固形物未滿5.0質量%時,與相同可溶性固形物為5.0質量%以上之製品3至6比較,沈澱或乳清分離變多,安定性變差之趨勢。另外,未使用高甜度甘味料之製品6之酸味與甜味之平衡差,風味亦差。
將溶解14.9質量%之脫脂奶粉及3.5質量%之葡萄糖之水溶液,以121℃平板殺菌3秒後,接種乾酪乳酸桿菌之菌元,培養至pH3.6,將其冷卻而得發酵物。接著,以15MPa均質化處理此發酵物後,於該23重量份中,分別混合77重量份之另外調製如表7所示組成之糖漿,得到可溶性固形物含量相異之製品7至14。另外,糖漿係溶解各成份於水,以112℃平板殺菌10秒後冷卻而調製。
PD及其他糖質之使用量係固形物換算值
對於所得製品7至14之剛製造後及於10℃保存14天後之製品外觀、沈澱、乳清分離、風味,依據試驗例1之基準進行評估。該結果如表8所示。
由表8之結果明顯表示,認為併用聚葡萄糖(PD)及各種糖質所調製之酸性乳飲料,即使此等源自聚葡萄糖以外之糖質之可溶性固形物相同,如製品7、8之源自糖質之可溶性固形物合計量未滿12.0質量%時,認為沈澱或乳清分離變多,安定性變差之趨勢。另外,如製品13、14之可溶性固形物合計量為18.0質量%以上時,認為於品質安定性上雖無問題,但形成口感厚重,與低熱量製品之印象不同的風味,嗜好性有變差之趨勢。
將溶解14.9質量%之脫脂奶粉及3.5質量%之葡萄糖之水溶液,以121℃平板殺菌3秒後,接種乾酪乳酸桿菌之菌元,培養至pH3.6,將其冷卻而得發酵物。接著,均質化處理(15MPa)此發酵物,於該23重量份中,分別混合77重量份之另外調製如表9所示組成之糖漿,得到可溶性固形物含量相異之製品15至23。另外,糖漿係溶解各成份於水,以112℃平板殺菌10秒後冷卻而調製。
PD及其他糖質之使用量係固形物換算值
對於所得製品15至23之剛製造後及於10℃保存14天後之製品的外觀、沈澱、乳清分離、風味,依據試驗例1之基準進行評估。該結果如表10所示。
由表10之結果明顯表示,認為併用聚葡萄糖(PD)及各種糖質所調製之酸性乳飲料,即使源自糖質之可溶性固形物合計量相同,如製品15至17之聚葡萄糖以外之源自糖質之可溶性固形物物未滿5.0質量%時,認為由添加水溶性鈣,明顯地有損害安定性之趨勢,如製品18至23之源自聚葡萄糖以外之糖質之可溶性固形物為5.0質量%以上時,抑制因添加鈣而安定性降低,進一步,可知鈣添加量若為至0.06質量%時,保存後亦不損害商品價值。
本發明之酸性乳飲料,含有聚葡萄糖及特定糖質以滿足所定條件,即使實質上不含有通常為達成酸性乳飲料之品質安定性所使用之各種增黏安定劑,仍可容易調製風味良好之低熱量型酸性乳飲料。
Claims (7)
- 一種酸性乳飲料,其特徵為,含有聚葡萄糖及至少1種以上選自群(a)之糖質,此等可溶性固形物之合計為12.0質量%至17.0質量%,且實質上不含有增黏安定劑,(a)葡萄糖、果糖、砂糖、海藻糖、麥芽糖、赤蘚醇、山梨糖醇、木糖醇、麥芽糖醇、乳糖醇、異麥芽酮糖、半乳寡糖。
- 如申請專利範圍第1項之酸性乳飲料,其為含有5.0質量%以上之至少1種以上選自該群(a)之糖質者。
- 如申請專利範圍第1項或第2項之酸性乳飲料,其為更含有來自乳原料之鈣以外之水溶性鈣鹽者。
- 如申請專利範圍第1項或第2項之酸性乳飲料,其為含有鈣量為0.01質量%至0.05質量%之源自乳原料之鈣以外之水溶性鈣鹽者。
- 如申請專利範圍第1項或第2項之酸性乳飲料,其熱量為50Kcal/100ml以下。
- 一種酸性乳飲料之製造方法,其特徵為,於酸性乳飲料基料中,配合聚葡萄糖及至少1種以上選自群(a)之糖質,使此等可溶性固形物之合計成為12.0質量%至17.0質量%, (a)葡萄糖、果糖、砂糖、海藻糖、麥芽糖、赤蘚醇、山梨糖醇、木糖醇、麥芽糖醇、乳糖醇、異麥芽酮糖、半乳寡糖。
- 如申請專利範圍第6項之酸性乳飲料之製造方法,其為配合5.0質量%以上之至少1種以上選自該群(a)之糖質者。
