Abstract
The invention discloses a method for suppressing astringency of catechin comprises adding glutamic acid to tea beverage having catechin content of 40-100 mg/100 ml. The tea beverage having catechin content of 40-100 mg/100 ml is suppressed in astringency of catechin through addition of 6 mg-20 mg/100 ml of glutamic acid. The tea beverage contains a lot of catechin and is easily drinkable with less astringency and bitterness even on warming sales.
