При очистке технического рыбьего жира, получаемого экстракцией рыбьих внутренностей и прочих отходов рыбной и консервной промышленности, в качестве отсто выдел етс так называемый баткак. Установлено, что этот продукт (баткак) может служить хорошим эмульгатором и стабилизатором дл самых различных дисперсий (эмульсий, суспензий и коллоидов). Стабилизуюш,ее действие баткака объ сн етс тем, что в нем содержатс свободные жирные кислоты, лецитин, азотосодержаш,ие продукты и прочие вещества, которые извлекаютс из сырь непосредственно или образуютс (жирные кислоты) в результате распада жиров в процессе технологической обработки сырь .When cleaning technical fish oil obtained by extracting fish interiors and other wastes from the fish and canning industry, the so-called batkak is used as sludge.
