Abstract

Battery moulds are used in an installation for producing pressed cheese, which moulds successively pass through a filling station, a first turning station, a press, a removal station, a second turning station and a cleaning section, after which they are ready to pass through these stages again. Each battery mould is composed of an outer frame (9) which is divided up into a number of individual moulds by means of intersecting partitions (12), which individual moulds each contain a transverse metal sheet (18, 19) which is displaceable to a limited extent in the individual mould, initially acts as the floor of the said mould and then, after the first turning, acts as a metal pressing sheet for the cheese compound, which as a result is collected in the upper part of the individual mould and can therefore be easily removed from the latter in the removal station. <IMAGE>
