Белковый концентрат и способ его производства, предусматривающий смешивание растительных белковых сырьевых источников с водой и паром, проведение экструзии в экструзионных устройствах, экстракцию образующегося конечного высокопористого продукта водно-спиртовыми экстракционными средами, отделение проэкстрагированных низкомолекулярных веществ и высушивание проэкстрагированного продукта, отличающийся тем, что экструдирование сырья проводят при влажности экструдируемой массы 20-35%, температуре 120-180°С, давлении 40-120 атм и длительности обработки сырья в экструдере от 5 до 60 с. ! 2. Способ по п.1, отличающийся тем, что экструдирование сырья проводят при влажности экструдируемой массы 25%, температуре 120°С, давлении 80 атм и длительности обработки сырья в экструдере 55 с. ! 3. Способ по п.1, отличающийся тем, что экструдирование сырья проводят при влажности экструдируемой массы 23%, температуре 185°С, давлении 120 атм и длительности обработки сырья в экструдере 30 с. ! 4. Способ по п.1, отличающийся тем, что перед экстрагированием высушивают экструдированные текстурированные продукты до влажности 7-10% и, при необходимости, хранят в течение необходимого срока. ! 5. Способ по п.1, отличающийся тем, что экстракция представляет собой ступенчатую последовательную экстракцию. ! 6. Белковый концентрат, полученный способом, описанным в пп.1-5. 1.
