The composition of claim 1, wherein the neutral metalloprotease is isolated from Bacillus sp. ! 6. The composition of claim 5, wherein the neutral metalloprotease is NprE. ! 7. The composition of claim 7, wherein the protein hydrolyzate is selected from wheat gluten hydrolyzate, soy protein acid hydrolyzate, cow's milk casein acid hydrolyzate, vegetable protein enzymatic hydrolyzate, and combinations thereof. ! 9. The composition of claim 1, wherein the inhibitor comprises a hydrolysis product resulting from the cleavage of a protein by the action of at least one neutral metalloprotease. ! 10. �

Claims (30)
