Рассол для однокомпонентного мясного продукта, свободного от материала из яичного белка, содержащий трансглютаминазу и каррагенан и не содержащий любой материал из яичного белка. ! 3. Рассол по п.2, дополнительно содержащий соевый белок.

Claims (3)

1. Способ получения однокомпонентного мясного продукта, свободного от материала из яичного белка, в котором используют трансглютаминазу и каррагенан.
2. Рассол для однокомпонентного мясного продукта, свободного от материала из яичного белка, содержащий трансглютаминазу и каррагенан и не содержащий любой материал из яичного белка.
3. Рассол по п.2, дополнительно содержащий соевый белок.
