Abstract
Se refiere al uso de mezclado en turbina durante la hidrolisis enzimatica de proteina acuatica de especies tales como peces, mamiferos acuaticos, crustaceos y/o moluscos, para obtener hidrolizados de proteinas acuaticas de alta calidad, que tienen oxidacion muy baja, perfil organoleptico mejorado y actividad biologica de interes mejorada, para consumo humano y productos cosmeticos. El mezclado en turbina puede inhibir la oxidacion durante la hidrolisis, contribuir a un aumento en la bioactividad y disminuir el sabor amargo del producto final. El procedimiento puede variar en material de partida, pretratamiento, tipo y cantidad de enzima, condiciones de hidrolisis, tiempo, grado de hidrolisis y postratamiento.
