Acesulfam-haltige Zubereitungen mit verbessertem GeschmackPreparations containing acesulfame with an improved taste
In diesem Zusammenhang ist z.B. bekannt, daß sich Acesulfam-K mit bestimmten anderen Süßstoffen abmischen läßt, wobei sich beide Süßstoffe geschmacklich vorteilhaft ergänzen können (DE-PS 2628294).Acesulfame-K is a new sweetener that is generally characterized by good taste properties. For applications in the food sector, acesulfame-K can in many cases be used as the only sweetener without any problems. Nonetheless, there is an incentive to further improve the good taste properties, since taste is an essential selection criterion for food. In this context, e.g. Known that acesulfame-K can be mixed with certain other sweeteners, where both sweeteners can complement each other in terms of taste (DE-PS 2628294).
A large part of the sweeteners consumed is consumed in the form of household preparations, i.e. in the form of sweetener tablets, powdered powders or solutions. While sweeteners and flavoring can be seen and coordinated as one unit in industrial processing of food, this is not the case in the household. That is why household preparations of sweeteners should be used as universally as possible and should be as widely compatible as possible with all possible flavors in food.
Of the sweeteners used to date, saccharin, in terms of its taste properties, by no means met this requirement. For this reason, attempts have been made to mix saccharin with various taste-correcting substances, with a reduction in the bitter aftertaste being achieved. However, some of the proposed corrections have not proven to be sufficiently effective.

A particular problem is caused by sweetener granules and powder. Such preparations are made because the pure sweeteners are unsuitable for household use due to their high sweetening power. The quantities to be dosed for normal sweetness would be so small that an exact setting of the sweetness to the desired value in the household would hardly be practical. The problem arises, however, that not all of the substances which are potentially suitable for blending with sweeteners are also taste-compatible with them.
As already mentioned, the taste properties of acesulfame-K as the only sweetener are usually fully satisfactory.
Furthermore, it was found that acesulfame-K can be mixed in taste with a number of auxiliaries for the production of scatter powders or granules, and that, surprisingly, in a number of cases even the auxiliaries have a positive influence on the taste assessment of acesulfame-K owned ..
The mixtures according to the invention can consist of acesulfame-K and the following substances, which can be contained in the mixture in the proportions indicated.

The compounds mentioned can generally be used as individual substances in mixtures with acesulfame-K. In addition, in most cases it is of course also possible to produce mixtures of the substances mentioned, which in turn can then be mixed with acesulfame-K. However, the following types of mixtures are preferably suitable for mixing with acesulfame-K: - Mixtures of amino acids with organic acids, salts of inorganic or organic acids, fillers or polysaccharides and taste-modifying substances - Mixtures of salts of inorganic acids with organic acids or their salts - Mixtures of organic acids and salts of inorganic or organic acids with proteins and peptides, fillers and taste-modifying substances - mixtures of proteins and peptides with fillers and taste-modifying substances - mixtures of fillers and taste-modifying substances.
Instead of pure acesulfame-K, a mixture of acesulfame-K with other sweeteners such as saccharin, cyclamate or <aspartame, preferably in the reverse ratio of their sweetening powers, can be introduced into such mixtures.
The mixtures can be obtained by uniformly mixing the solid components. Insofar as the substances listed are water-soluble, solutions can of course also be mixed if the use as a sweetener solution is intended.
