Claims (9)
- 정백미가 수세된 뒤 그 수분함량이 23중량% 이상이 되도록 정백미의 수분함량을 조정하는 단계 ; 쌀에 당이 침투하고 쌀에 함유된 물의 6 내지 38중량%를 제거하도록 당액에 쌀을 함침하는 단계, 및 함유된 전분이 사전 젤라틴화(α화) 되지 않는 조건하에서 쌀을 건조하는 단계로 되어 있는 것을 특징으로 하는 건조미의 제조방법.
- 제 1 항에 있어서, 정백미의 수분함량이 수세되기 전 13 내지 16중량%인 것을 특징으로 하는 제조방법
- 제 1 항에 있어서, 정백미의 수분함량이 쌀의 수세후 28 내지 35중량%에 달하도록 정백미의 수분함량을 조정하는 것을 특징으로 하는 제조방법.
- 제 1 항에 있어서, 당액이 소르비톨, 만닛, 수크로우스, 글루코우스 및 당액으로 된 군에서 선택된 적어도 하나의 당을 함유하는 수용액인 것을 특징으로 하는 제조방법.
- 제 1 항에 있어서, 당은 쌀을 당액에 함침함에 의해 3 내지 9중량%의 양만큼 쌀에 함침되는 것을 특징으로 하는 제조방법.
- 제 1 항에 있어서, 쌀에 함유된 12 내지 35중량%의 수분이 쌀을 당액에 함침함에 의해 제거되는 것을 특징으로 하는 제조방법.
- 제 1 항에 있어서, 쌀은 15 내지 60℃의 온도에서 10 내지 120분간 당액중에 침지되는 것을 특징으로 하는 제조방법.
- 제 1 항에 있어서, 쌀은 10 내지 75℃의 온도, 50 내지 90%의 상대습도에서 2 내지 24시간동안 건조되는 것을 특징으로 하는 방법.
- 제 1 항에 있어서, 쌀은 쌀의 수분함량이 10 내지 15.5중량%에 달하도록 건조되는 것을 특징으로 하는 제조방법.
