Claims (4)
- 대두 분쇄물 또는 인삼의 분쇄물이나 또는 이들의 혼합물을 가수분해 효소, 아밀라제 또는 시판당화효소로 가수분해하고, 유기 또는 무기의 제1 또는 제2철 화합물의 존재하에 상기 가수분해물 중에서 효모를 배양함을 특징으로 하는 철분 강화 식품의 제조법.
- 제1항에 있어서, 탈피 생대두를 미분쇄하여 얻어진 200메쉬 이하의 생대두분을 뜨거운 물과 혼합하고 자비한 대두 분쇄물, 또는 인삼을 자숙하여 분쇄한 인삼 분쇄물이나, 또는 이들의 혼합물을 아밀라제로 가수분해하고, 유기 또는 무기의 제1 또는 제2철 화합물의 존재하에 이 가수분해물 중에서 사카로마이세스·세레비세(Saccharomyces cerevisiae)를 배양함을 특징으로 하는 제조법.
- 제1 또는 2항에 있어서, 유기 또는 무기의 제1 또는 제2철 화합물이 구연산 철 또는 유산철인 제조법.
- 제1항에 있어서, 전기 배양을 30분간 내지 4일간 행하는 제조법.
