Abstract
Description
Claims (14)
- 식품을 비투수성의 필름으로 포장하고 당해 식품을 상이한 온도의 유동하는 브라인 속에 순차적으로 침지하여 동결시키는 식품의 동결 방법.
- 제 1항에 있어서, 식품을 급속히 냉각하는 공정, 식품의 외주부와 중심부와의 온도차를 적게 하는 공정 및 식품의 완전 동결을 달성하는 공정이 이순서에 따라서 형성되도록 상기 식품을 상이한 온도의 유동하는 브라인 속에 침지하도록 한 식품의 동결 방법.
- 제 1항 또는 제 2항에 있어서, 상기 브라인의 유동 속도는 1-3m/초인 식품의 동결 방법
- 제 1항에 있어서, 상기 브라인 온도는 상기 식품의 침지 순서에 따라서 -35℃∼-40℃, -20℃∼-25℃, -35℃∼-40℃로 되어 있는 식품의 동결 방법.
- 제 4항에 있어서, 상기 식품이 최초로 침지되는 -35℃-40℃의 브라인 유동 속도는 1-1.2m/초인 식품의 동결 방법.
- 제 1항에 있어서, 상기 식품의 브라인에의 침지 시간은 합계 15분∼30분인 식품의 동결 방법.
- 브라인을 저류하기 위한 브라인조와 비침수성의 필름으로 포장된 식품을 상기 브라인조의 브라인 속에서 반송하는 컨베이어와 상기 브라인조의 브라인 내로 반송되는 상기 식품의 반송경로에 향하여 상이한 온도의 브라인을 분출하도록 상기 반송 경로에 따라서 배열시킨 다수의 브라인 분출 노즐을 갖추는 것을 특징으로 하는 식품의 동결 장치.
- 제 7항에 있어서, 상기 컨베이어와 상기 노즐과의 사이에 다공질(多孔質)의 균압판이 배치되어 있는 식품의 동결 장치.
- 제 7항 또는 제 8항에 있어서, 상기 노즐의 브라인 분출 속도는 1-3m/초인 식품의 동결 장치.
- 제 7항에 있어서, 상기 노즐을 -35℃∼-40℃의 브라인을 분출하는 제 1노즐과 -20℃∼-25℃이 브라인을 분출하는 제 2노즐 및 -35℃∼40℃의 브라인을 분출하는 제 3노즐로 된 식품의 동결 장치.
- 제 10항에 있어서, 상기 제 1노즐의 브라인 분출 속도는 1-1.2m/초인 식품의 동결 장치.
- 제 7항에 있어서, 상기 컨베이어 이동 속도를 상기 식픔의 브라인에의 침지 시간이 합계 15-30분이 되도록 조정한 식품의 동결 장치.
- 제 7항에 있어서, 상기 컨베이어는 적어도 그 하부 주행면이 상기 브라인 조의 브라인 속에 침지하는 주반송 컨베이어의 입구측에 있어서 상기 식품을 그 부반송 컨베이어 사이에 협착하여 브라인 속에 반송하는 입구측 보조 컨베이와의 사이에 상기 식품을 협작하여 브라인으로부터 각 반송 컨베이어의 브라인으로부터 노출한 회전부에는 그 회전부에 향하여 각각 브라인을 분사하는 브라이 분사장치가 설치되어 있는 식품의 동결 장치.
- 제 7항에 있어서, 상기 브라인조에는 당해 브라인조에서 취출된 동결후의 상기 식품을 세척하여 당해 식품에 부착하고 있는 브라인을 제거하는 브라인 세척 장치가 부착되고 있는 식품의 동결 장치.
