Claims (3)
- 유화제로서 효소로 분해된 난황을 사용하는 것을 특징으로 하는 수중유형유화 식품의 제조방법.
- 제1항에 있어서, 효소가 리파아제 또는 프로테아제인 것을 특징으로 하는 수중유형 유화 식품의 제조방법.
- 제1항 또는 제2항에 있어서, 난황을 분해하는 정도가 분해전의 난황중의 포스파티딜콜린에 대한 분해후의 난황중의 리소포스파티딜콜린의 비율이 10%이상인 것을 특징으로 하는 수중유형화 식품의 제조방법.※ 참고사항 : 최초출원 내용에 의하여 공개하는 것임.
