Claims (3)

  1. 유화제로서 효소로 분해된 난황을 사용하는 것을 특징으로 하는 수중유형유화 식품의 제조방법.
  2. 제1항에 있어서, 효소가 리파아제 또는 프로테아제인 것을 특징으로 하는 수중유형 유화 식품의 제조방법.
  3. 제1항 또는 제2항에 있어서, 난황을 분해하는 정도가 분해전의 난황중의 포스파티딜콜린에 대한 분해후의 난황중의 리소포스파티딜콜린의 비율이 10%이상인 것을 특징으로 하는 수중유형화 식품의 제조방법.
