도 3은 바실러스 아밀로리퀴파시엔스 KACC 15866 및 바실러스 아밀로리퀴파시엔스 HJ5-2 균주의 바실러스 세레우스 타겟(target) 유전자인 groEL과 독소 관련 유전자인 nheA, nheC의 전사량을 나타낸 도이다.

- 신규한 바실러스 아밀로리퀴파시엔스(Bacillus amyloliquefaciens) HJ5-2 균주.
- 제 1항에 있어서, 상기 균주는 수탁번호(81027BP)로 기탁된 신규한 바실러스 아밀로리퀴파시엔스(Bacillus amyloliquefaciens) HJ5-2인 것을 특징으로 하는 균주.
- 제 1항에 있어서, 상기 균주는 바실러스 세레우스(Bacillus cereus)에 대한 항균활성을 가지는 것을 특징으로 하는 균주.
- 제 1항에 있어서, 상기 균주는 바이오제닉 아민(biogenic amine) 분해활성을 가지는 것을 특징으로 하는 균주.
- 제 4항에 있어서, 상기 바이오제닉 아민은 히스타민(histamine) 및 티라민(tyramine)으로 구성된 군으로부터 선택된 어느 하나 이상의 바이오제닉 아민(biogenic amine)인 것을 특징으로 하는 균주.
- 제 1항 내지 제 5항 중 어느 한 항의 균주, 또는 이의 배양액을 유효성분으로 함유하는 발효식품 제조용 미생물 제제.
- 제 1항 내지 제 5항 중 어느 한 항의 균주, 또는 이의 배양액을 스타터(starter) 균주로 이용하여 발효식품을 제조하는 방법.
- 제 7항에 있어서, 상기 발효식품은 메주, 한식된장, 된장, 조미된장, 고추장, 조미고추장, 춘장, 청국장, 혼합장, 한식간장, 양조간장 및 혼합간장으로 이루어진 군에서 선택되는 어느 하나의 식품인 것을 특징으로 하는 방법.
- 제 1항 내지 제 5항 중 어느 한 항의 균주, 또는 이의 배양액을 발효식품에 처리하는 단계를 포함하는 바실러스 세레우스(Bacillus cereus) 제어방법.
- 제 1항 내지 제 5항 중 어느 한 항의 균주, 또는 이의 배양액을 유효성분으로 함유하는 바실러스 세레우스(Bacillus cereus)에 대한 항균용 조성물.
