Claims (5)
- 소맥에 종균을 접종하고 배양시키는 전통주 양조용 누룩의 제조방법에 있어서, 소맥피에 15∼30%의 소맥분을 혼합하여, 누룩 원료를 제조하고, 이 원료에 아스페르길루스 우사미(Aspergillus usamii) 8731(KCTC 8750P) 종균, 리조푸스 델레마르(Rhizopus delemar) 1476 종균(KCTC 8751P) 또는 이들의 혼합물을 물에 풀어 살수 접종하고 8∼15mm 크기로 초핑 성형하여 배양시키는 전통주 양조용 누룩의 제조방법.
- 제1항에 있어서, 누룩원료에 종균을 접종할 때 접종되는 종균을 물에 풀어 수분함량 95%인 상태로 하여 원료량의 30∼40%의 양을 살수 접종하는 전통주 양조용 누룩의 제조방법.
- 제1항에 있어서, 배양조건이 30∼40℃에서 72시간 동안 배양시키는 전통주 양조용 누룩의 제조방법.
- 일반미생물의 활성범위 이하인 pH 3.2 이하의 산성 조건에서 3000∼4000sp의 당화력을 갖으며 글로코-β아밀라제와 푸마르산, 젖산, 구연산 등의 유기산을 생성하는 리조푸스 델레마르(Rhizopus delemar) 1476(기탁번호 KCTC 8751P) 균주.
- 전분의 당화력이 1500∼2000sp이고 글루코-아밀라제를 생산하는 아스페르길루스 우사미(Aspergillus usamii) 8731(기탁번호 KCTC 8750P) 균주.
