Description
体によって吸収される甘味物質としてイソマルツロース(パラチノース(商標))又は砂糖代替物を含むスクラロース含有ミルクチョコレートを調製した。このミルクチョコレートをスクラロースに典型的な後味について官能的に評価した。
・イソマルツロースを含むスクラロース含有ミルクチョコレート
・トレハロースを含むスクラロース含有ミルクチョコレート
・ラクチトールを含むスクラロース含有ミルクチョコレート
・マルチトールを含むスクラロース含有ミルクチョコレート
・エリスリトールを含むスクラロース含有ミルクチョコレート
図1で明らかなように、イソマルツロースは、スクラロース含有チョコレートで、この甘味物質の長く持続する後味を短縮する。このことは他の砂糖代替物、特に例えばエリスリトールを含むスクラロース含有ミルクチョコレートと比較するときわめて顕著である。
甘味物質としてイソマルツロース、マルトデキストリン又はスクロースを含むスクラロース含有水溶液を調製した。すべての溶液がさらにスクラロースを含んでいた。溶液をスクラロースに典型的な後味について官能的に評価した。被験者のために使用した検査用紙は、実施例1で説明したものと同じであった。
・マルトデキストリン溶液:7.916%マルトデキストリン;0.004%スクラロース;92.080%水。
図2で明らかなように、イソマルツロースは、スクラロース含有溶液で、マルトデキストリン又はスクロースを含む溶液と比較して、この甘味物質の長く持続する後味を短縮する(0=後味を確認できない;2=後味をはっきり感知できる)。
Claims (18)
- 味短縮剤としてのイソマルツロースの使用。
- イソマルツロースにより少なくとも1種の強力甘味物質の味が短縮される、請求項1に記載のイソマルツロースの使用。
- 強力甘味物質がスクラロースである、請求項1又は2に記載のイソマルツロースの使用。
- イソマルツロースにより強力甘味物質の持続する後味が短縮される、請求項1〜3のいずれか1項に記載の使用。
- 強力甘味物質の持続する味が甘い後味である、請求項4に記載の使用。
- 甘味物質混合物での請求項1〜5のいずれか1項に記載の使用。
- 食品、嗜好品又は医薬品における特に請求項6に記載の甘味物質混合物の請求項1〜5のいずれか1項に記載の使用。
- 飲料での特に請求項6に記載の甘味物質混合物の請求項1〜5のいずれか1項に記載の使用。
- 甘味物質混合物が1〜99重量%、特に40〜99重量%、好ましくは70〜98重量%(甘味物質混合物の全乾燥物に対して)のイソマルツロースを含む、請求項7又は8に記載の使用。
- 甘味物質混合物が0.0005〜3重量%、特に0.001〜1重量%、好ましくは0.01〜0.5重量%(甘味物質混合物の全乾燥物に対して)の強力甘味物質を含む、請求項7又は8に記載の使用。
- 飲料、食品、嗜好品又は医薬品が1〜99重量%、特に20〜70重量%、好ましくは30〜60重量%(飲料、食品、嗜好品又は医薬品の全乾燥物に対して)の甘味物質混合物を含む、請求項9又は10に記載の使用。
- イソマルツロース及びスクラロースを含む強力甘味物質混合物において、スクラロースの味持続時間がイソマルツロースによって変更されることを特徴とする、甘味物質混合物。
- スクラロースの味持続時間がイソマルツロースによって短縮される、請求項12に記載の甘味物質混合物。
- スクラロースの持続する甘い後味が短縮される、請求項12又は13に記載の甘味物質混合物。
- 少なくとも1種の強力甘味物質にイソマルツロースを添加することを特徴とする、少なくとも1種の強力甘味物質の味の持続時間の短縮方法。
- スクラロースの味の短縮のための請求項15に記載の方法。
- スクラロースの持続する後味の短縮のための請求項15又は16に記載の方法。
- 請求項15〜17のいずれか1項に記載の方法で得られるイソマルツロースと強力甘味物質、好ましくはスクラロースの混合物。
