Abstract
【解決手段】 本発明の香料は、葛花乾燥物および/または葛花抽出液を有効成分として含む。本発明の香料は、食品素材などと混合することができ、そして風味がよい食品用組成物を提供できる。

Description
葛の花部である葛花は、フラボノイド、サポニン、およびトリプトファン配糖体を含有している。葛花とは、蕾から全開した花までの段階で採取した花を含む。本発明においては、特に、蕾を用いることが好ましい。
本明細書において、「葛花乾燥物」とは、葛花を乾燥して得られた物、葛花を乾燥後破砕して得られた乾燥粉末などをいう。
本明細書において、「葛花抽出物」とは、葛花、上記葛花乾燥物から抽出された抽出液、これらの抽出液を濃縮した濃縮液などをいう。
本発明の香料は、葛花乾燥物および/または葛花抽出液を有効成分として含有する。この葛花乾燥物および葛花抽出液は、葛花特有の甘い香りを有する。したがって、飲料、食品などに本発明の香料を添加することによって、飲料、食品などの香りを改善することができる。また、液体の香料(例えば、葛花抽出液)に食品を浸漬することにより、浸漬した食品に香りを付与することもできる。さらに、葛花乾燥物および葛花抽出液には、有用な成分が含有されているため、このような成分を同時に摂取することができる。
本発明の食品用組成物は、上記香料を含有し、好ましくは、さらに食品素材を含有する。必要に応じて、添加剤などを含有する。本発明の食品用組成物に用いられる食品素材としては、特に限定されない。例えば、ツバキ科植物由来の茶葉、甜茶、コーヒー、ココア、麦若葉、アシタバ、ケール、甘藷茎葉、および桑葉(以下、これらの食品素材を「特定の食品素材」という場合がある)が挙げられる。上記香料と食品素材とを混合する場合、食品素材は1種類のみを用いてもよいし、2種類以上を併用してもよい。
葛花乾燥物(葛花乾燥粉末:太田胃散社製)と熱湯とを用いて、香料を調製した。具体的には、0.1g、0.5g、および1gの葛花乾燥粉末を、それぞれ150mLの熱湯に3分間浸漬し、抽出液を得た。次いで、これらの抽出液を濾過し、そして濾液を室温まで冷却した。これらの濾液をそれぞれ試験香料とした。
0.1gの葛花乾燥物(葛花乾燥粉末:太田胃散社製)と4種類の茶葉(緑茶葉(煎茶)、ウーロン茶葉、紅茶葉、および甜茶の葉)のいずれか1種類(1g)とを、ティーバッグに分包して飲料用食品を調製した。次いで、各ティーバッグを150mLの熱湯に3分間浸漬して、4種類の試験飲料1−1〜1−4を調製した。
緑茶葉(煎茶)、ウーロン茶葉、紅茶葉、甜茶の葉、プーアル茶葉、コーヒー豆の焙煎後の粉砕物、および麦の実の焙煎物を、それぞれ1gずつ準備した。そして、準備した素材を熱湯(200mL)に2分間浸漬し、濾過して、室温になるまで放置し、各素材からそれぞれ飲料を得た。ココア粉末については、1gを熱湯(200mL)に溶いた後、室温になるまで放置して8種類の飲料を調製した。
2gの葛花の乾燥物(葛花乾燥粉末:太田胃散社製)を2000mLの熱湯に2分間浸漬した。その後、濾過して濾液を得た。この濾液を、室温になるまで冷却し、葛花の抽出液(香料2)を得た。
下記の原料を用いて、ティーバッグ(1包あたり3g)を調製した。
葛花乾燥粉末 50
松葉茶の茶葉 10
緑茶葉 30
玄米 10
下記の原料を用いて、飲料を調製した。具体的には、葛花の乾燥粉末(10g)、紅茶葉(10g)、および麦茶用の麦(30g)を、それぞれ1Lの熱湯(98℃)へ10分間浸漬し、濾過して得られた各飲料を以下の容量で混合した。
葛花乾燥粉末より得られた飲料 200mL
紅茶葉より得られた飲料 500mL
麦茶用の麦より得られた飲料 300mL
アスコルビン酸 500mg
製造例2で用いた飲料を用いて、以下の配合量にて飲料を調製した。
葛花乾燥粉末より得られた飲料 200mL
紅茶葉より得られた飲料 500mL
麦茶用の麦より得られた飲料 300mL
製造例2および製造例3により得られた茶飲料500mLを、透明なペットボトル容器に入れて、1週間、室温で放置した。その結果、製造例2で得られたアスコルビン酸を含有する飲料は、製造例3の飲料よりも変色が少なく、沈殿も見られなかったことから、優れた安定性を有することがわかった。
