Abstract
【解決手段】 蒸留酒にキトサン粉末またはキトサン被覆物を添加し、またはキトサン粉末またはキトサン被覆物と、シリカゾルとを添加し、これを濾過機で濾過することにより、蒸留酒に含まれる不飽和脂肪酸、不飽和脂肪酸と金属イオンの化合物、またはフーゼル油を除去することを特徴としている。

Description
油臭のする2年ものの米焼酎(アルコール度31%)200mlをビーカーに採り、キトサン粉末(粘度法による平均分子量:15万、メッシュサイズ:40メッシュパス)を1g添加し撹拌した。
上記において、キトサン粉末を添加しないものを、比較例1とした。
市販の米焼酎(アルコール度25%)200mlをビーカーに採り、キトサン粉末(粘度法による平均分子量:15万、メッシュサイズ:40メッシュパス)0.2g及びシリカゾル(大塚食品株式会社製、商品名「コポロック200」)800ppmを添加し撹拌した。
上記において、キトサン粉末及びシリカゾルを添加しないものを比較例2とした。
アルコール度35%の米焼酎をアルコール度25%になるように割り水し、白濁を生じさせたもの200mlをビーカーに採り、正電荷のシリカゾル(大塚食品株式会社製、商品名「コポロック200」、シリカ含有量20重量%)1000ppmを添加し撹拌した。
上記において、シリカゾルを添加しないものを比較例3とした。
アルコール度35%の米焼酎をアルコール度25%になるように割り水し、白濁を生じたものを、No.5Cの濾紙にケイソウ土(米国セライト社製、商品名:セライト・ハイフロ・スーパーセル)をプリコートしてヌッチェで濾過した。この濾過液に加水し、アルコール濃度を3%とし、濁度の上昇がみられたもの200mlに、キトサン粉末(粘度法による平均分子量:15万、メッシュサイズ:40メッシュパス)を1g添加し撹拌した。
上記において、キトサン粉末を添加しないものを比較例4とした。
Claims (4)
- 蒸留酒にキトサン粉末またはキトサン被覆物を添加し、これを濾過機で濾過することにより、蒸留酒に含まれる不飽和脂肪酸、不飽和脂肪酸と金属イオンの化合物、またはフーゼル油を除去することを特徴とする蒸留酒の精製方法。
- 濾過面にキトサン粉末またはキトサン被覆物を貼り付けた濾過機を用いて、蒸留酒を濾過することにより、蒸留酒に含まれる不飽和脂肪酸、不飽和脂肪酸と金属イオンの化合物、またはフーゼル油を除去することを特徴とする蒸留酒の精製方法。
- 蒸留酒にキトサン粉末またはキトサン被覆物と、シリカゾルとを添加することにより、蒸留酒に含まれる不飽和脂肪酸、不飽和脂肪酸と金属イオンの化合物、またはフーゼル油を除去することを特徴とする蒸留酒の精製方法。
- 蒸留酒に正電荷のシリカゾルを添加することにより、蒸留酒に含まれる不飽和脂肪酸、不飽和脂肪酸と金属イオンの化合物、またはフーゼル油を除去することを特徴とする蒸留酒の精製方法。
