Claims (1)
- 【特許請求の範囲】 1.AFPを含有する凍結食品を製造する方法であり、前記凍結食品は、遊離 AFPの実質的不存在下で少なくとも部分的に予備凍結され、次にその食 品中に遊離AFPを含有させることによる方法。 2.凍結食品がAFPの不存在下で少なくとも部分的に予備凍結され、次にそ の食品中にAFPを含有させる、請求項1に記載の方法。 3.AFPが非遊離形態で凍結食品に添加され、それにより前記非遊離形態及 び処理条件が、少なくとも部分的に予備凍結した後に、AFPが遊離形態 で放出されるように選ばれる、請求項1に記載の方法。 4.ゲル化された粒子、リポソーム又はカプセル化物(encapsulates)中にAF Pを含有させることにより、AFPが凍結食品中に非遊離形態で含まれる、 請求項3に記載の方法。 5.アルギン酸塩に基づくゲル化粒子中にAFPを含有させる、請求項4に記 載の方法。 6.遊離AFPの含有の前に、存在する水の少なくとも20重量%が凍結される、 請求項1に記載の方法。 7.AFPの量が最終製品に基づいて0.0001乃至0.5重量%である、請求項1 に記載の方法。 8.凍結食品が凍結菓子製品である、請求項1に記載の方法。 9.AFPを含み、10mmより大きい、破壊挙動が観察される最小層厚さを有す る凍結食品。 10.請求項5によるか又は請求項1の方法により得られる、2.0未満のアス ペクト比を有する氷晶を有する凍結食品。
