Claims (1)
- 【特許請求の範囲】 1. 方法は、 タン白起源を乳化してエマルジョンを得、 エマルジョンにアルカリを添加してpHを約8以上に上げ、 機械エネルギーを使用してエマルジョンを急速加熱および細砕し、加熱エマル ジョンのタン白を少なくとも一部凝固させ、 加熱エマルジョンを凝固させてすじを形成し、および 凝固エマルジョンをチャンクに形成して処方化エマルジョン製品を得る、 ことを含む、肉様外観を有する処方化エマルジョン製品の製造方法。 2. アルカリとしてNaOH、KOHまたはCa(OH)2、またはその混 合物を添加する、請求項1記載の方法。 3. エマルジョンのpHを約9〜約12の範囲に上げるのに十分なアルカリを 添加する、請求項2記載の方法。 4. エマルジョン重量基準で約60重量%までの水分はタン白起源で乳化し 、約45〜85重量%の水分含量を有する処方化エマルジョン製品を得る、請求 項1記載の方法。 5. エマルジョンは約102°〜約120℃の範囲の温度に加熱する、請求 項1記載の方法。 6. タン白、脂肪および約45〜85重量%の水分を含み、約8以上のpHを 有する、肉様外観を有するすじのある処方化エマルジョン製品。 7. 約55〜約65重量%の水分を含む、請求項6記載の処方化エマルジョ ン製品。 8. 製品の約10〜約25重量%のタン白を含む、請求項6記載の処方化エ マルジョン製品。 9. すじのうち少なくとも約50%は約50μm未満の厚さを有する、請求 項6記載の処方化エマルジョン製品。 10. 請求項6から9のいずれか1項に記載の処方化エマルジョン製品のチャ ンクとチャンクのアルカリ性を中和する酸性キャリアを組合せて含む、ペットフ ード。
