Al fine di ottenere un ottimo mescolamento degli ingredienti con il minimo impiego/dispendio di energia il gruppo mantecatore (1) secondo il trovato comprende un contenitore cilindrico (4) che è refrigerato sia lungo la parete laterale (8) che quella di fondo (7) ed ha le superfici interne di dette pareti (7, 8) tornita.Il mescolatore (5) invece comprende una pluralità di lame (20) a forma di "L" che giacciono in un piano che è incidente all'asse di rotazione (23) secondo un angolo (?) di circa 30° ed incidente ad una retta (R) tangente nel punto di contatto con la superficie interna della parete laterale secondo un angolo (?) variabile tra 90° e 60° lungo lo sviluppo delle lame 20.
