Abstract

An apparatus for the continuous cooking of a bulk product comprises, in a line, a chamber 20 for precooking of the product by essentially saturated steam, maintained at a pressure at least equal to atmospheric, and a chamber 49 for cooking under vacuum the precooked bulk product, mutually connected by valve means 42, 43. There are also provided in the chambers 20, 49 respective motorised worms 25, 51 to continuously move and blend the bulk product so as to promote its uniform cooking. <IMAGE>
