Abstract

The invention relates to the preparation of vanilla-flavoured ice cream with sweeteners and zero-fat milk. The thus-prepared ice cream is characterised by low glycemic quotient (less than 55) and the presence of vegetable fibres (greater than 3g per 100g of the product).
