Abstract
A dry composition readily dispersible in warm water, skim milk or skim milk and water to form a milk substitute for calves is a mixture of non-fat milk solids, a fat such as coconut oil, palm kernel oil, hydrogenated palm or soybean oil, lard or tallow, an emulsifier for the fat, a non-toxic organic acid to precipitate casein in the reconstituted milk, and a water-soluble stabilizer to prevent settling out of flocculated casein and creaming of the fat in the reconstituted milk. The fat may form 10-30% of the composition. The emulsifiers are lecithin, glyceryl monostearate and sorbitol monostearate. The acid may be citric, tartaric, adipic, fumaric or lactic acid. The stabilizers may be starch or flour which swells in cold water, gum tragacanth, locust bean gum or guar gum. A sugar such as lactose, e.g. as dried whey, dextrose, corn sugar or malt syrup solids may be added. Minerals, e.g. dicalcium phosphate, magnesium oxide, copper compounds, and vitamins may be incorporated. Antibiotics, e.g. chlortetracycline and oxytetracycline may be incorporated.
