Abstract

Rusks or toasts of even size are prepared from pre-baked slices of dough by effecting incisions on one or both sides of the slice before toasting. The incisions may be straight and correspond to the largest longitudinal dimension of the slice or be circular to make a partial separation between a rim and a centre part of the slice. Incisions on the one surface only are preferably about 6/10 of the slice thickness but when both surfaces are cut, the incisions are approximately half this depth.
