Abstract

A process for producing wine or other aqueous liquid impregnated with carbon dioxide or other gas supplied solely from an external source consists in filling the head space above the liquid when maintained in a quiescant condition in a bottle or other stopperable container with gas under pressure in a closed system; the impregnation process being terminated by releasing the pressure of the gas in the head space and then stoppering the liquid in the container. In the example described wine is first freed from air and other gases by agitation under reduced pressure. The fluid is then placed in unstoppered bottles which are tilted to about 70 degrees to the vertical in a rack in a pressure vessel where the impregnation process takes place.
