Class 64(1) A heat exchanger, for insertion in a liquid, has a number of sections or chambers 11, 12 to which heating or cooling fluid may be supplied, the supply to each section being independently controllable whereby part or all of the exchanger may be put into operation according to the height of the liquid about the sections. In the preferred embodiment, the exchanger is mounted in a brewing copper having supply and discharge conduits 3, 4 for wort and consists of three elements 5 arranged at 120 degrees about a common steam supply pipe 6. Each element includes a vertical open ended cylinder to which the annular chambers or sections 11, 12 are brazed and through which the liquid to be heated is pumped or convected. The pipe 6 supplies the three upper chambers 11 while a pipe 8 supplies the three lower chambers 12. Low-pressure steam may be supplied to the upper chambers and high-pressure steam to the lower chambers, the condensate from the upper and lower chambers being conveyed to separate drip receivers and steam traps.
