Abstract
In extracting gelatine from stock such as ossein and skins of pigs, buffalo, camels, calves and rabbits, the stock is acidified, e.g. with hydrochloric, sulphuric, sulphurous, phosphoric or acetic acid, and circulated with hot water through an extractor to yield a solution of extracted gelatine having a pH of about 1.5 to 3.5 which is then neutralized to a minimum pH of about 4.0, preferably to a value of about 5.0 to 8.0. Neutralization is preferably effected by adding caustic soda, caustic potash, sodium carbonate or sodium bicarbonate. Salts may be removed from the neutralized solution by ion-exchange resins. The solution may then be filtered, set by cooling, cut into slabs, dried and powdered. Salts may be removed from slabs by dialysis. The flow of hot water in the extractor may be either counter current to, or concurrent with, the flow of stock. The temperature of the hot water may range from about 120 to 200 DEG F. but a temperature between about 145 and 170 DEG F. is preferred. The hot water may be passed through the extractor at a rate sufficient to ensure that the extraction period does not exceed two hours.
