Stable solutions of flavon glucosides or of their aglycones are prepared by using as the solvent an aqueous solution of sarcosine anhydride. In examples: (1) Quercitrin is shaken with a 30 per cent aqueous solution of sarcosin anhydride to give a solution containing 1.4 to 1.5 per cent of quercitrin. (2) Neohesperidin is shaken with a 20 per cent solution of sarcosin anhydride to give a product containing 2 per cent of neohesperidin. (3) Hesperetin is similarly treated and a 0.6 to 0.7 per cent solution obtained.
