Abstract

Mould growth in baked goods including bread, rolls, cakes, and cookies is prevented by treating their surfaces with a fatty acid, or a halogen derivative thereof, having 1-6 carbon atoms in the molecule, or by forming the acid in situ. The acids used include formic acetic, propionic, butyric, valeric and caproic or their halogen derivatives such as mono-, di- or trichloro- or bromo-acetic acids. A salt of the acid together with a stronger acid may be employed, e.g. sodium, potassium or other suitable acetate together with hydrochloric, sulphuric or phosphoric acid. Acetic acid may be used to the amount of 0,4 gm. per 453 gm. of baked goods. Application may be effected by means of a sponge, brush, cloth, &c., by treating in vacuo with the acid by spraying the acid on the goods, or by treating with air saturated with the acid.
