Abstract
Alcoholic beverages, particularly wines, are medicated by adding iodine and/or compounds of iodine thereto. The iodine combines with natural constituents of the beverage, for example, with the unsaturated bodies, essential oils, alcohols, and colouring matters such as oenin. Suitable iodine compounds are iodides of potassium, sodium, iron, manganese, and the like. A solution of iodine in the iodide with an addition of ethyl alcohol may be stirred into the untreated beverage, which is then allowed to stand on stillage for at least three weeks at from 55 DEG to 65 DEG F. before bottling. The proportion of iodine added should not exceed 8 grammes per gallon of the beverage.
