Abstract
An encapsulated formulation that has vitamins and minerals encapsulated in a matrix material, which is then added to a nutriment, preferably ice cream. The method of manufacture involves encapsulating the formulation in a matrix, followed by adding this to the nutriment. The formulation may contain vitamins D, C, B6, and B12 along with magnesium, zinc and iron. The nutriment may have added protein. The nutriment may also contain added dietary fibre. The method of forming the ice cream may involve hand whisking a base of double cream, date syrup, milk and, depending on flavour, fresh fruits, coffee, vanilla and/or around 100% chocolate. During the hand whisking the encapsulated formulation may be added, ideally with the additional protein. The mixture is preferably then potted and frozen.
Description
ENCAPSULATED FORMULATIONS
The invention relates to the addition of encapsulated formulations to ingestible products, and in particular to ingestible products to help patients with a variety of conditions to obtain the correct nutritional material and sufficient calories in their diet.
Some medical patients, depending upon their condition, often struggle with traditional nutritional drinks. Many won't touch them and if they do, they rarely finish them and so more nutrition is required in less volume. If someone is not eating well or has lost weight, they are likely to need to include nutritional supplements in their diet which help you maintain a good nutritional intake.
According to one aspect of the present invention, there is provided an encapsulated formulation comprising vitamins and minerals encapsulated in a matrix material and which is added to a nutriment.
According to a second aspect of the present invention, there is provided a method of making a nutriment product comprising encapsulating in a matrix material a formulation comprising vitamins and minerals and adding the encapsulated formulation to the nutriment.
Owing to this aspect, the encapsulated minerals and vitamins are formulated to enhance bioavailability and stability, providing improved nutrient delivery.
A nutriment is a food or beverage product.
Advantageously, the encapsulated formulation is added to a high calorie food product, such as ice cream, soups and porridge.
The encapsulated minerals and vitamins are formulated to enhance bioavailability and stability, providing improved nutrient delivery compared to conventional methods. Crucially, the encapsulated formulation does not affect the flavour of the nutriment product it is being added to. The encapsulation of the minerals and vitamins is in a matrix material which is preferably a lipid and, advantageously a liposome.
The encapsulated formulation is preferably meticulously designed, driven by clinical need to customise a nutrient profile in the formulation and thus tailor the food or beverage product to the needs of individual consumers, who could be patients that have a condition and/or going through a treatment for a condition which means that they are not eating well and need nutritional support.
As well as ice cream mentioned hereinabove, various other food and beverage products are envisaged to include the encapsulated formulation including but not limited to, juices, smoothies, energy bars, nutritional supplements, and vitamin strips.
The encapsulated formulation comprises the following key nutritional vitamins and minerals:- * Vitamins D, C, B6, and B12, and * Magnesium, Zinc and Iron The encapsulated formulation provides substantially the following percentage of a person's Reference Intake (RI) of the vitamins and minerals listed above: Table 1 -%RI of 1.4g of encapsulated formulation per 100g of ice cream Vitamins and minerals %RI Vitamin B6 429% Vitamin B12 40% Vitamin C 63% Vitamin D3 80% Magnesium 33% Iron 21% Zinc 40% In the embodiment of the encapsulated formulation in ice cream, the product can provide 1/3 of someone's RDA of the vitamins and minerals, but other embodiments might provide higher or lower fractions of the RDA.
Table 2 below shows the amounts of encapsulated formulation (in mg) per 1.4g and per 30g of formulation compared to RI values.

Clearly when customising a nutritional profile, there is scope to add other vitamins, minerals or other substances, such as B1 thiamine, B2 Riboflavin, nicotinic acid and vitamin A. Additional minerals and vitamins depending on the product/flavour of, for instance, the ice cream may naturally occur in a base ingredient. If, for example, banana is added to the ice cream potassium is naturally included in the product (but not in the encapsulated formulation) or if strawberry is added there would be copper, phosphorus, vitamins K and E, and B9, manganese and potassium.
Some additional natural dietary fibre could also be added to the nutriment which plays a crucial role in human diets by helping to support gastrointestinal function.
Protein, as mentioned in the method of making ice cream hereinabove, can also be incorporated into the nutriment. For example, whey protein could be added which has its own vitamin and mineral content as shown in Table 3 below.

Medical professionals want to have the very best nutrition for their patients. Patients prefer to have nutrition which is tasty and enjoyable.
Claims (11)
- CLAIMS1. An encapsulated formulation comprising vitamins and minerals encapsulated in a matrix material and which is added to a nutriment.
- 2. An encapsulated formulation according to claim 1, and comprising vitamins D, C, B6, and B12, and magnesium, zinc and iron in the matrix material.
- 3. An encapsulated formulation according to claim 1 or 2, wherein the nutriment is ice cream.
- 4. An encapsulated formulation according to any preceding claim, wherein the nutriment further comprises added protein.
- 5. An encapsulated formulation according to any preceding claim, wherein the nutriment further comprises added dietary fibre.
- 6. A method of making a nutriment product comprising encapsulating in a matrix material a formulation comprising vitamins and minerals and adding the encapsulated formulation to the nutriment.
- 7. A method according to claim 6, wherein vitamins D, C, B6, and B12, and magnesium, zinc and iron are encapsulated in the matrix material.
- 8. An encapsulated formulation according to claim 6 or 7, and further comprising adding protein to the nutriment.
- 9. An encapsulated formulation according to any one of claims 6 to 8, and further comprising adding dietary fibre to the nutriment.
- 10. A method according to any one of claims 6 to 9, wherein the nutriment product is ice cream.
- 11. A method according to claim 10, wherein the following steps are performed to form the ice cream: * a base of double cream (for delivering calories), date syrup (for a reduced sugar content), milk and, depending upon flavour; fresh fruits, coffee, vanilla and/or around 100% chocolate (again for reduced sugar content) are hand-whisked together until it reaches a correct consistency for potting, * during the hand-whisking the encapsulated formulation and, if required, extra protein is added to ensure correct nutritional content, * the mixture is then potted and frozen.
